Simple Muffins

Ingredients (use vegan versions):

    1 1/2 cups flour
    1 1/2 cups organic brown sugar
    1 teaspoon salt
    2 teaspoons baking powder
    3/4 cup soy milk or water
    1/4 cup oil
    canola oil cooking spray or muffin baking cups

Directions:

Preheat oven to 400 Fahrenheit.

Now combine flour, sugar, salt, and baking powder together in a mixing bowl.

Add soy milk and or water and oil.  Mix together.

Place baking cups in a muffin pan, pour mix into baking cups or just spray your muffin pan with cooking spray and pour into the pan like I do and bake for 25 to 30 minutes.

How many you make depends on how big your pan is and how much is poured into each muffin.

Note: this is a very plain but delicious recipe. I love it. They’re good for breakfast with your coffee, tea, etc.; though I eat them at anytime.

Serves: Varies

Preparation time: 30 minutes

These look WONDERFUL.  I see these as being the perfect easy muffin to jazz up with dried cranberries, dried apricots, blueberries, even shredded soy cheese!

I just fixed these tonight and they turned out wonderfully. I added in some dried cranberries which was a nice touch. I would just advise people to be careful about how long they bake them.  I set my timer for 25 minutes and by that time they had become a little burnt around the edges and this was despite the fact that I made them in my Texas-sized muffin pan.

I love this recipe.  I've tried different variations - adding mashed banana, using all or some whole wheat flour, halving the sugar, substituting applesauce for half the oil - and all have worked great.  they always taste great, but sometimes aren't as pretty as the ones in the picture.  I found that if I preheat the oven to 450, then turn it down to 400 when I put the muffins in, it makes the tops rise more so that they look more picturesque.

wonderful!! I used a third of the sugar, threw in a handful of oats and about ten strawberries - my dragon boat racing team loved them!

These are so good! I added a cup of mashed banana, a couple handfuls of chopped walnuts, and used only 1 c of brown sugar and they are so yummy! And moist! My only complaint is that the edges look burnt, and I only baked them for about 23 minutes, but they're practically perfect on the inside, so I don't want to reduce the cooking time and have them undercooked inside, maybe adjusting the temperature would help? Either way, really tasty, I can't wait to make these again!

I used 1 cup wheat flour and 1/2 cup regular flour. Added 2 tbsp (blueberry) flax seeds, 1 cup sugar and 1/2 cup brown sugar. 1/4 cup rice milk 2/4 cup water, Some raspberries, 1 tsp fresh strawberry juice.
I brought it to school, and they were gone by 1st period.
All my friends(and people I didn't know) loved them, and everyday they ask me for more.
I've even had people say they would be vegan forever if I made these muffins again.

Great recipe. Mine came out darker then in the other pictures, not sure why! Tasted GREAT, but more sugary than I expected.

Maliaka, your oven temperature was too cool.  That's why your muffins have dents in the middle of them.  Do you use an oven thermometer? Unless you have a very new oven chances are your thermostat is incorrect.

These turned out great and were way too easy! I added blueberries and reduced the sugar by one-third, as Camillemays did, which was perfect, as I don't like overly sweet foods.  I also baked it for for ~ 17 minutes @ 400 degrees.  I think 30 minutes is too long.  I'll be doing these again!

P.S For those of you who cook/bake for just one person, as I do, if you divide this recipe by one-third, it makes 1 nice sized muffin  Smiley

SOOOOO good.   I had a little time to kill so I thought I would make these. I stole an idea from another receipe and brewed two bags of chai tea in the 3/4 cup water.    Then I realized that I don't actually have any muffin tins.   I had to make these into bars in a glass pan.   They were amazing and light!!!!   YUM!

I used 1/2 all purpose flour, 1/2 whole wheat flour, and 1/2 oat bran. I added raisins, also. Delicious!

Yum!!  Just might be the best thing I've ever tasted.  Screw rich desserts, I'll tear up these muffins any day. 

Great variation:  Make them "suprise muffins" by filling them with fruit perserves.  My favorite filling is to boil raisins and sugar and lemon juice down into a sticky syrup goo and using that.
