Traditional Swiss Chard and Beans

Ingredients (use vegan versions):

    1 large bunch of red (Swiss) chard
    1/2 a large diced onion
    minced garlic
    1 can white or navy beans, strain the liquid (or you can soak your own)
    2 tablespoons olive oil
    salt and pepper to taste

Directions:

Chop the chard into cube sized pieces.

Sauté onion and garlic in olive oil, add chard (do all over medium/low heat. Strain the bean juice (you can leave some if you want a "thicker" consistency) and add the beans. Heat up until chard becomes soft but not mushy. Salt and pepper to your taste.

My Italian mother and grandmother always made this and served it with a hearty bread. My grandfather called it "good peasant food"-meaning its cheap and super healthy!

Serves: 4-5

Preparation time: less than 20 minutes

I used green chard because that was what I had and seasoned salt instead of regular.  Easy and yummy!

This was a simple healthy dish! Very nice flavor. We did not add any oil and didn't miss it. Thanks for sharing!

This was really good as leftovers. I reccomend using the juice from the beans because I liked dipping my bread in it : )

I love this recipe and make it all the time! I had no idea it is "traditional."  It's really good with diced shitake mushrooms and served over a bed of brown rice pasta (Tinkyaga brand). To spice it up a bit, I boil the pasta with a couple of teaspoons of Thai green chile paste. Yum!!

I didn't know if I should use the red part/stems..but I decided to (since it is the majority of the plant). I sauteed the stems..and then added lots of onion, lots of s and p, some red pepper flakes, about 8-9 cloves of garlic, and the chard leaves. I used garbanzo beans, and drained most of the liquid off (I should have left it in though). I also added a little bit of veg stock at the end. It was good with lots of flavors..and the garbanzo beans were good in it as well. : )

 I used herbed salt, added ground chilli and dried chilli flakes, so spicy and yum. Also cooked the stems before adding other stuff and used a some of the drained liquid. So quick and easy! This will serve well with rice.

I love super healthy dishes!  I used chickpeas for my beans.  I felt that this dish needed several good shakes of salt to make the flavors really come out.
