Recipe submitted by birkenstock+babe, 06/29/06

100% Good for You Oatmeal Cookies

Ingredients (use vegan versions):

    2 cups Turbinado sugar
    3/4 cup oil
    2 eggs or equivalent egg substitute
    2 teaspoons vanilla
    4 cups whole wheat pastry flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    Approx 1 to 2 cups rolled oats (non-instant)

Directions:

Preheat oven to 375 degrees.

Mix sugar and oil till blended.  Add eggs or egg substitute and vanilla to wet mixture.

In another bowl, mix flour, salt, baking powder and baking soda.

Add dry ingredients gradually to wet ingredients; mix well.

Stir as much oatmeal as you like (to desired consistency) into the batter.

Place dough in fridge for about 10 minutes to chill.

Place in heaping spoonfuls onto cookie sheet.

Bake 8-10 minutes until golden on the edges.

Enjoy with a big glass of cold soy milk!

Serves: large batch

I must say, when I bit into these cookies i almost died!  Best cookies ever!!

I'm not sure if they are 100% healthy, but they are too tasty for me to care.  My friend made these for me, and she didn't even use a a commercial egg replacer, just vinegar.  How versatile!!!

i used brown sugar instead of the turbinado, and they turned out great!

These were really good, but once I put the dry and wet ingredients together, my dough was really really dry. I added some soymilk and it was a little better, but still kind of dry. I also added some cinnamon, 1/2 tsp, but I would add more the next time I made them because I couldn't even taste it. Overall, they still taste really good!  Grin

"Good for you" is, of course, a subjective description, but eggs and oil seem really out of place in there.

My dough was really really unusuable dry, so I added probably 1/4 cup of water which made it a lot better.  They didn't look scrumptious but tasted pretty good.

I loved these!  I used vinegar because I didn't have ener-g egg or ground flax seed and I added soy milk to soften dough.  I made some straight oatmeal and then some with raisins, walnuts and coconut.  Even my dad who has an aversion to vegan foods and anything with whole wheat flour gobbled them up.  thanks so much!

This didn't work for me, at all.  When made per the recipe batter was bone dry.  I had to add a lot of liquids (soymilk, water, and a bit more oil) to correct it, and the resulting cookies were barely passable.  I'm not going to try these again, but if I had to do it over I would have started with half the flour.
