Easiest White Frosting

Ingredients (use vegan versions):

1/4 cup Earth Balance buttery stick
    1/4 cup vanilla soy creamer
    2 cups confectioner's sugar

Directions:

Cream together buttery stick and soy milk.  Slowly add sugar and beat until thick (2 minutes or so).

Refrigerate and let set.

Frosts 24 cupcakes, maybe a little more.  Sweet and creamy!

Preparation time: 5 minutes

Easy and yummy, though if it isn't obvious by the "Refrigerate and let set" instructions, the final frosted product should also be refrigerated IMMEDIATELY after frosting.  Mine started running before I was even halfway through frosting my cupcakes.

Can anyone tell me what stores carry the Earth Balance sticks.  My local Kroger has only the tub spread.

I know that Whole Foods does, I buy it there all the time!

Thank you.  There is no Whole Foods in my neighborhood, but I know there is one within 30 miles.  I will find it.

Yum! I scraped the filling off of 10 Newman-O's and added it to the mixture. I crushed the cookies in a food processor then stired them in before refrigerating. The frosting is good, but it got runny really fast when I was working with it and I have to keep my cupcakes chilled. Other than that it is quite tasty! Thanks!

How can you guys preach a vegan way of life, organic, fair trade, peace to the planet through food, and yet stink up the air with 30 + 30 = 60 MILES to the store for some margarine??? Seems  a little counter productive or hypocritical to me.  Just my opinion.  Undecided

I live a half hour away from any store other than convenience stores that carry no local or organic produce. Since I would rather feed my children healthy whole foods instead of Surefine white bread. I'm a hypocrite?

Anyone who feels the need to comment with an insult isn't very "peace to the planet." Just my opinion.

The frosting looks yummy. Can't wait to try it!

Pretty good! I only had unsweetened soymilk, so I had to add the vanilla [enough to get one BUZZED it came out so fast] but that was my bad. That aside this was simple, tasty, and easy.
