these were pretty good, but not what i was expecting at all! theres not much flour to them, so when they say sppon by TEASPOON they are not kidding, cause the cookies spread out to be really thin and wide. the icing was delicious, though! if i make these again, i think i will add more flour and perhaps more egg replacer, they were mostly falling apart. very tasty though!

omg- amazing. i think this is my favorite cookie EVER..doubled the glaze and soaked the cookies in it..so moist& fluffy, tart& sweet.

This is a great recipe! Grin I used 3/4 cup of sugar and 2 energy eggs. I recommend increasing the size of the cookies from 1 tsp to at least 2 because the 1 tsp cookies are gone in one bite! Also, they didn't spread much, they kind of poofed up a little, (probably because I put the dough in the fridge until the oven's ready) but that made them light and fluffy.  Smiley

I agree - this was a tasty tasty cookie!  one funny thing though - they didn't look like I had expected.they were pretty small, but puffy. it was interesting. and the flaxseed showed up - in little brown specks.

but SOO tasty. I brought them to a meeting, and they were all gone! I love lemon - I love it! the flavour was just like the lemon social tea biscuits that I adore. maybe I'll play around with the shape of these cookies - see if I can make them thinner, to dip into tea.

 This recipe is great. When you tried it, you will like it. I use vegetable oil instead of soy butter, also did not use glaze. The cookies are very delicious, and they are really like small bite size cakes. I will make more cookies next time and try to glaze them. I hope glaze will not make cookies too sweet for me.  Smiley

In the words of Rachel Ray  YUM-O!!  I'm taking these to our playgoup's cookie exchange today.  I only had 1 lemon, so I used 1 lime & 1 clementine orange to get the juice up to 1/4 cup.  I also used the rind of the orange in the batter.  I used 1/2 cup of sugar and even with the glaze on top, they weren't too sweet at all.  What a fantastically easy cookie, THANKS!!

Wow, these are good.
I actually made these with chopped bits of candied bitter melon which is a strange combo, but I needed a light cookie that would let the taste of the bitter melon come through since the candied stuff is delicate in flavor.

It was perfect and the light texture of the cokie is so good.
I loved these and will be making them time and time again.

I got 90 bite size cookies from my batch.

Yum yum yum!  I just made these for a baby shower tea party I'm co-hosting tomorrow.  They're a little scone-like and VERY tasty.  I wasn't sure when they were considered "done".  I found that they shouldn't turn golden, but will be set and bounce back when lightly pressed in the center.  Per the recipe instructions, I transferred them to a cooling rack immediately after removing them from the oven, and despite my fears, they were not undercooked.  I made 1.5 times the recipe, hoping for 30 for the party + lots left over, but I only came out with about 34 cookies using a medium cookie scoop.
It's probably a good thing I don't have a lemon tree, or I'd eat these every day.  hotforyou  I'll try to post a picture soon.

I got 90 bite size cookies from my batch.
WOW!!!!!!!  Those musta been some teeny tiny cookies!

Just reporting back... These were an absolute HIT at the baby shower today!  My husband (who LOVED these) and I are seriously entertaining the idea of planting a lemon tree in our yard because of this recipe. biggrin

I just calculated the nutritional info for this recipe (I'm bored right now). if the batch makes 48 cookies, there are approx 36 calories, 1 g fat, scant fiber, 6 g carbs, and 1 g protein. just thought I'd let ya'll know.

I made these today and they did NOT turn out how I'd expected. I followed the recipe, but man. when I made them before, they were pretty good, nice and sweet and simple, but the flax did something weird. I still thought they were good though, and so did other people.

but this time, they didn't puff up as much, weren't as sweet, and hence, the flaxseed-y-ness is a little overwhelming. their not awful - still pretty edible, and the hint of lemon is nice, but that FLAXSEED! it shows up in little bits and taints the lemon flavour. I'm wondering, because I assume the flax is used as an egg replacer, could I just use something like ener-g?

the batch only made 33 cookies, a lot less than before. weird.

grr. I'm a little disappointed. I love lemon. I really liked these cookies before. I think the next time I make them, and I think I'll make them again soon, I'll use something other than flax. that might make a difference.

Wow.  Wow.  These cookies are amazing.  I used blood orange instead of lemon and the glaze was a beautiful bright pink.  They were pretty easy too.  These are a definite keeper.

OMG! This recipe rocks!!!  Thumbs Up I made them yesterday evening for a basketball game...  some beer to wash it down! All my non-veg friends enhaled the cookies before I could put them on the rack to cool... 1 change I made was 2 tablessppon of batters to make 1 cookie... I like my cookies Bigalicious... Keep up the good work in creating amazing recipes.
