Superb Sandwich

Ingredients (use vegan versions):

    Tofutti 'American' cheese
    vegan gourmet 'mozzarella' cheese
    vegan parmesan cheese
    bread of choice (I prefer a stiff loaf for this)
    tomato
    Lightlife deli slices (I like turkey style) OR Tofurky slices
    vegan bacon product (I like Smart Bacon, but I have used Fakin' Bacon, bacon bits, etc.)
    onion
    vegan margarine
    BBQ sauce of your choice

Directions:

If you are using a bacon product that needs to be cooked, cook it first according to package directions, set aside.

Slice very thin the tomato (I mean paper thin).

Slice the onion on the thin side as well (but not quite as thin).

Get out a few of the turkey slices and set aside (I use two per sandwich).

Slice or grate the vegan gourmet cheese (if you slice it, it’s better to do it thin).

Unwrap the Tofutti.

Preheat fry pan on low/medium setting.

'Butter' the outsides of two pieces of bread.  Put one slice in the pan, butter side down.  Add Tofutti cheese, vegan gourmet cheese, and sprinkle with parmesan.  Add the other slice butter side up on top.  While this is slowly cooking, add a spoonful of margarine and the onion to the outskirts of the pan.

The key to this is low/medium-low heat.  It takes longer but you will get a good smooth melt.

When the bread has browned to a nice golden brown color, carefully flip the sandwich and stir the onions.

When the other side is nicely browned the inside should be very gooey (Tofutti almost liquefies, so be careful).

Open the sandwich.  Quickly shovel the onions, deli or Tofurky slices, bacon product, and layers of thin tomato slices.  Put back in pan for just a minute more (gets more gooey this way).

Slice in half, and dip into BBQ sauce.  YUM

**Here is a tasty variation*** Instead of using the parmesan substitute in the sandwich after you butter the bread sprinkle it on top and pat it down, sprinkle pat, until you can not possibly fit anymore on.  Grill as directed.  Some of the parmesan will burn, but what you will have is a delicious parmesan crusted bread.  Also works with nutritional yeast.

This is my first time doing a step by step recipe, hope it is easy to understand.
