Yams with Peanuts

Ingredients (use vegan versions):

    1 large yam
    2/3 cup extra crunchy peanut butter
    2 tablespoon rice vinegar
    1-2 tablespoon cumin
    2 Serrano or 3 jalapeno chiles, or to taste
    2 tablespoon soy sauce
    3-4 carrots
    2 small tomatoes
    1/4 cup orange juice
    1 tablespoon sesame seed oil
    1/3 cup raisins

Directions:

This is really kind of "North African/Chinese/ Southwestern or something Yams with Peanuts", but that wouldn't fit on the recipe title.

Cube yam and boil until nearly done, not too mushy, 7-10 minutes.

In the meantime, dice tomatoes, bias slice carrots, and dice Serrano chiles, set aside.

Combine peanut butter, soy sauce, vinegar, cumin and sesame seed oil in a small bowl, set aside.

Once the yam is cooked as much as you like, drain.

Add carrots to a large frying pan or a wok and cook for just a few minutes.  Add sweet potatoes, chiles.  Cook for a couple more minutes.  Add peanut butter mixture and stir until well mixed.  Add tomatoes and mix in those as well.  Add the orange juice at the last minute to sort of deglaze the pan.  Remove from heat and mix in raisins.

This was one of those recipes I made up in the grocery store as I walked through the aisles, and it turned out pretty well, I think.  It's good and spicy.

This was delicious! The sauce is really tasty (although I had to thin it a bit with some tomato juice). I used chopped chipotle peppers and spinach instead of carrots and was very happy with the result.
