Quick and Easy Pear, Cranberry and Spinach Salad

Ingredients (use vegan versions):

    any kind of lettuce (I like romaine)
    baby spinach
    3 pears
    dried cranberries or cherries (craisins work good)
    sliced almonds or your favorite kind of nut
    raspberry vinaigrette dressing

Directions:

Cut up 3 pears into chunks and fry them for about 10 minutes, adding water every now and then and cinnamon if you like.  Let them cool for a few minutes.

Mix lettuce, spinach, dried cranberries, almonds, and pears together.

Pour raspberry vinaigrette over it and enjoy Smiley

Serves: 6

Preparation time: 10 minutes

Awesome!  I did the pears in a bit of cinnamon, as suggested and that was perfect.  I made a raspberry vinaigrette with raspberry vinegar, oil, maple syrup and fresh tarragon all blended.  It was also a very pretty salad that looked good on the table (as did the rice we made).  Another "keeper" for the family.
