Sesame Udon with Spinach & Mushrooms

Ingredients (use vegan versions):

    2 (7 oz.) packages Udon (yes, you can use the ones at the regular grocery store, just
    toss out the high sodium seasoning!)
    1/2 cup fresh spinach
    3 mushrooms, sliced thin
    1 clove garlic, minced
    1 tablespoon sesame oil
    1 to 1 ˝ tablespoons vegetarian mushroom "oyster" sauce (you can find this at almost any
    oriental grocery store, sometimes even the regular grocery store)
    about 2 tablespoons water (for the noodles to cook properly, and to thin sauce)
    salt and pepper to taste, if desired
    sesame chili oil (optional)

Directions:

Have the packages of Udon open and ready to toss in.

Add sesame oil to a skillet over medium high heat. Add garlic and sauté for about 20 seconds (don't let it burn).  Add the sliced mushrooms and let cook for about a minute until slightly browned.  Add spinach and let wilt.

Scoot the veggies to the side and add the Udon, adding a bit more oil if necessary.  Let cook for 2 minutes, add water and "oyster" sauce, stir.  Taste sauce and add salt, pepper, and sesame chili oil, if desired.  Noodles are ready when they are noticeably softened.

Enjoy!

*Some suggestions on variations:  add some cubed, extra firm tofu or some kind of meat alternative, or both!  Whatever you do, please try not to use Boca products...they are owned by the corporate monsters Dean/Horizon (encouragers of factory farming), and use genetically modified soybeans.

Serves: 2-3

Preparation time: 10 minutes max

Delicious! I got a bunch of fresh oyster mushrooms, and I had one last package of udon, so I made this Smiley

I'm glad I did.. I did make a few alterations tho.. I added about a teaspoon of grated fresh ginger, I didnt have veg. oyster sauce, so I used soy sauce with a sprinkle of sugar in it, and I boiled the noodles first to make them softer.. Oh, and I only used one package of udon..

Also I garnished with sesame seeds and minced green onions..

It was super good tho.. thanks for the recipe Cheesy

Udon are puffy, white, japanese wheat noodles and are one of the best noodles ever.. Smiley.. mmmmmm

the fresh ones are much better than the dried ones you have to boil, but are a little harder to find.. if you cant find fresh ones the dried ones are fine, they just arent quite as puffy and thick.. find them in asian food stores and sometimes health food stores..

This is so good!  The first time I didn't make it with the oyster sauce but the second time I did - found it at an Asian grocery store.  The oyster sauce makes a huge difference with the flavor.  I also used lots more mushrooms and spinach.  Yum.   Thumbs Up  Thanks!!!
