Chocolate Covered Crackers

Ingredients (use vegan versions):

    1 bag of saltine crackers
    1 cup chocolate chips (semi-sweet are often vegan, double check)
    1 cup brown sugar
    1 cup margarine (I use Earth Balance)

Directions:

Line up the saltine crackers on a cookie sheet.

Combine remaining ingredients in a pan and heat on medium until melted and smooth.

Pour the chocolate mixture over the crackers.

Cool in the fridge for at least 1 hour.

This recipe may sound a little weird but it’s so good and super easy!  Kinda tastes like caramel chocolate because of the brown sugar.  My friend told me about this recipe and now I make it all the time!

Serves: 8-10

Preparation time: 10 min

Ok! The name is just bad. The end result is amazing. It's not just like a chocolate covered cracker. It's more like a heath bar. It's like chocolate covered toffee and it's fabulous! Cheesy I alway get the crackers all crocked but who cares! These things are discustingly addictive! So cheap and easy and fattening Cry because you will not be able to stop eating these little gems! I like to sprinkle chopped walnuts on top of the chocolate (do this while the chocolate is still warm) Grin. I just can't say enough about how amazing these are.

i used to make this in high school all the time, but with real butter. we got the recipe from a dessert chef! the way we did it is to melt the butter and sugar and then pour that mixture on the crackers and bake it. then when it came out of the oven, we would sprinkle chocolate chips on top which would melt immediately and make sort of a marbled effect. YUMMM!!! so glad to see this recipe again, and can't wait to try it vegan style!!

Oh yea, i forgot to add that i usually bake it in the oven for 5-10 min at 350 before refrigerating it! glad it does work without baking though...oops!

I made this at Passover with matzah as the 'cracker'... you just layer a cookie sheet with matzah and then follow the rest of the instructions.  Everyone loves it.  Also I saw the same recipe on cookinglight but with half the amount of margarine (and still rave reviews). Haven't actually tried that little, but I did I did try using about 3/4 of a cup probably and it still came out just as great.

Delicious!  I made this similar to the way that Curiale mentioned.  First, I laid out a sleeve of saltine crackers over a parchment-lined jelly roll pan.  Next, I melted just the brown sugar and Earth Balance margarine together over medium heat.  Once the mixture began boiling, I let it boil for around 3-4 minutes.  I poured this mixture over the crackers, making sure that all were covered, and baked them in a preheated 400 F oven for 5 minutes.  Immediately upon removing them from the oven, I sprinkled semisweet chocolate chips all over the top (about 2/3 of a 12oz bag).  I then put the pan back in the warm oven (temperature off) for a minute or so to help melt the chips.  Then, I removed the pan from the oven and used the back of a spoon to spread the chocolate completely over the toffee-covered crackers.  Finally, I sprinkled chopped almonds (around 1/2 cup or so) all over the top and refrigerated the pan for a couple hours.  This is so easy and super addictively tasty!  The flavor is similar to how I remember Heath bars tasting.

Very interesting, not what I expected.  I did cut down on the butter b/c that seemed like a lot and they were still good.  I would make them again.  I like the nut idea too.

The saltiness of the crackers are not noticeable in this dessert because the chocolate overtakes the taste.  I used unsalted saltine tops, which to me taste salty, but after I made this dessert I could not pick up the saltiness of the crackers.  I bet graham crackers would taste absolutely phenomenal due to the added cinnamon and sugar. I suppose saltines are "accidentally vegan" and available at more stores than vegan graham crackers (if you know of any stores that sell vegan graham crackers, let me know!) so that's why the cook decided to use saltine crackers.  Post your results!

Murray Cinnamon Grahams are vegan. I haven't eaten them in a while though, because of the "partially hydrogenated." I swear I stop reading the label as soon as I see that. Roll Eyes Better than milkfat, though!

I agree with the first post--adding walnuts on top is an awesome idea.  These are marvelous because they are so convenient and so tasty.  Who would have thought that saltine crackers could ever be... good?

Once again, very easy and tasty!  This is obviously not a super healthy recipe, but when you crave something sweet and sinful, yet simple, this recipe is great.  I like almonds on top of mine.

ok they are in the fridge now!!!!  I am a bit concerned because my crackers seemed kinda weird(maybe stale??) anways i made one change, i added about 3 heaping tablespoons of peanut butter(organic) to switch it up a bit and not nearly as much brown sugar(couldnt get much out of my box..hard as heck hahahahaha)........ill keep you guys and gals updated!!
