Oven Baked Sweet Potato Fries

Ingredients (use vegan versions):

    3 large sweet potatoes
    garlic infused extra virgin olive oil
    kosher salt
    finely ground pepper
    West Indian chili sauce

Directions:

1) Preheat oven to 425 Celsius.

2) Peel sweet potatoes and cut into long, slender fry shapes.

2) Place on baking sheet and toss with garlic infused extra virgin olive oil.

3) Season to taste with kosher salt and finely ground pepper.

4) Bake for on the top oven rack for 10 minutes at 425 Celsius, turn the sweet potatoes and bake for another 10-15 minutes until golden brown on all sides.

5) Drain excess oil on paper towels and serve immediately with West Indian hot chili sauce.

Keep it baked, not fried! Absolute comfort food.

Serves: 4

Preparation time: 20 mins

Sweet potato fries are absolutely delicious, but you might want to check out your oven temp--425 Celsius is equal to about 800 degrees Fahrenheit!

these came out okay but they were really soft after 15 minutes on each side at 425 degrees and i couldnt keep them any longer because they were starting to burn..
any suggestions?

of course, it'll depend on how thick your "fries" are sliced....
I just made these last night (roughly based on this recipe).  I cut them into wedges about 3 inches long and 1/4 inch thick, set my oven to 400 F, and placed them on the middle (not top) rack.  I gave them about 15 minutes on one side, flipped them, and put them back in for what was going to be another 10...but I checked them after 5, and some of the slightly thinner ones had started to burn.

So, I'd recommend a slightly lower oven temp, 10 minutes on one side, and a closely-monitored 10 minutes (more if needed) after flipping the fries AND rotating the baking sheet.
