Recipe submitted by my mom's friend, 05/23/06

Lisa's Chocolate Cake

Ingredients (use vegan versions):

    1 cup sugar
    1 1/2 cups flour
    1 teaspoon baking soda
    1/3 cup cocoa
    1/2 cup oil
    1 cup cold water
    2 teaspoons vanilla
    1/2 teaspoon salt
    2 tablespoons vinegar

Directions:

This recipe comes from my mother's friend, and I didn't even have to veganize it! It's probably THE most moist cake I've ever had.

Mix first eight ingredients well (all but vinegar).

Add the 2 tablespoons vinegar and mix quickly until mixed well.

Bake for 25 minutes at 375 degrees Fahrenheit.

Serves: 6-12

Preparation time: 30 minutes

Thanks to my co-worker that told me about this recipe, I made this cake for my parents and husband yesterday. 3/4 of the cake was eaten in one day! They love how moist it tastes. I used carob powder in the place of the cocoa and I topped the cake with carob chips for decor. I will definitely be making this cake again!  Cheesy

So when I told my SIL (an incredible cook) that I was going vegan, she said that vegans aren't any fun because they can't eat chocolate cake.   Sad 

So I read all the reviews of all the vegan chocolate cakes I could find, and decided to make this one - also the first time I've ever made any kind of cake from scratch in my life. Let me tell you, it took about 5 minutes to mix together and came out tasty, cakey (as opposed to browniesh), moist, and won the SIL's resounding approval!  Grin

Adaptations: just to be sure she liked it, I increased to 3/4 cup cocoa, and mixed in carob chips.

Shocked when i made this cake it came out so bad! it came out dry, hard and pretty bitter! Sad i dunno what happend the mixture looked perfect........
anyone got any ideas?

Sameblood - did you double-check that you used all the ingredients, sounds like maybe you didn't have enough milk. Also - double-check the temp in your oven with an oven thermometer. Mine is aboutl 15 degrees cooler, so it took an extra ten min of baking. Good luck!

I think this cake is perfect. Goes well with frosting or vanilla soy dream... Love that it doesn't need soymilk, since I hardly ever have it. I usually make it into cupcakes and only bake it for 20mins.

I used vanilla extract, and just to be extra vanilla-y, I also used vanilla flavored rice milk with the water. But I bet you'd be fine with extract.

I just made this as a late night craving sort of thing. Wow! This is the first vegan cake I've made that doesn't taste...well, vegan. Not that vegan cake is bad but the consistency was ideal. The ingredients surprised me, I was relieved because I was out of soy and I don't like the taste of egg replacer. The whole baking soda + vinegar thing was fun because it reminded me of science class volcanoes. Tongue Anyway, it's a new favorite for me. I guess I should note that I had to leave it in and extra 10 mins but, that's standard for my oven (low altitude maybe?). I didn't put any frosting on it. I thought that maybe this cake with no frosting, but add chocolate chips inside, would be awesome! ::drool:: HIGHLY RECOMENDED!!!

Nice basic recipe. Add a few raspberries and wow! I actually was a little short on chocolate when I made these and they still turned out great. Recommended, very easy recipe.
