Amazing Potato Salad

Ingredients (use vegan versions):

    8 medium potatoes
    2 stalks of celery
    1/2 cup chopped onions
    1 or 2 diced pickles (sweet or dill)
    1 teaspoon mustard
    1 teaspoon Dijon mustard
    1 cup vegan mayo
    paprika sprinkled on top
    salt and pepper to taste

Directions:

Wash, peel and boil potatoes for about 25 minutes, or until soft.  Drain and let them cool for a few minutes. Cut potatoes into small cubes, and put them in the fridge for about an hour to cool off some more.

When potatoes are cool, place in a bowl or dish, and stir in the onions, celery, pickles, mayo, mustards, salt and pepper. Sprinkle paprika on top.

Serves: 4

Preparation time: a couple hours- mostly just to let potatoes cool in the fridge.

:)This is definitely the best recipe for potato salad I've tried.  My husband loved it too.  We had a guest from Austria who gobbled it up!  I used Vegenaise, but may try Nayonaise (lower in fat) next time.  Thanks for submitting it.

Great recipe! Creamy and crunchy with lots of flavor. We used golden new potatoes, which were creamy and not too starchy. Sprinkled paprika and nutritional yeast, and added tumeric to the salad. Didn't add pickles. The celery and onions were really good with it - but onion breath after Smiley Easy to make and great as leftovers!

This is the perfect steal-stuff-from-the-kitchen lunch! I made this as a pasta salad, so made pasta, then got tomatoes, onions, bell peppers, veganaise, and mustard from the kitchen. I also used my own pickles. Very tasty.

My potatoes were small--I made it using 5 cups of potatoes (measured after being mashed), and used a homemade vegan mayo.  For the mayo recipe, see the comments section in the recipe "An Iowan Treat."
But I digress.  This was delicious!!

The recipe name doesn't lie. this potato salad IS AMAZING.  Really yummy - and I've used a few variations.  The first time I used new red potatoes with the skin on.  I didn't allow the potatoes to get too soft, so the salad wasn't creamy at all, but still good.  I just made it again for a BBQ tomorrow and decided to try it with golden potatoes.  This time, I almost overcooked the potatoes, so the salad is very creamy (but with a nice crunch from the onions and celery).  JUST AS YUMMY!  I used Nasayo veggie mayonnaise and dried dill weed instead of the pickles both times.  A+++ on the recipe!  Thanks again Smiley

This IS amazing potato salad!  I found a mix with dill, lemon, jalapeno, and some other stuff, and it goes PERFECT in this.  Thanks!

I just made this for a picnic tmrw with some slight alterations.
I didn't have (and don't really like) celery so totally omitted that.
Didn't have paprika, though wish i did.
And I used a tablespoon of my favorite (Kosciusko - polish! - mustard) instead of the 2tspns reg/dijon.
I also added about half a red bell pepper, diced, at the last minute.
It came out delicious! For some reason I was a bit wary of the pickles... but I'm glad I threw them in anyway because they def MADE this salad.
(I also didn't measure the vegenaise exactly but I'm sure I used less than a cup. Didn't want everything to be swimming in it, just wanted a cohesive flavoring...)

This recipe was awesome! I usually don't add the celery but always add celery flakes. I add lots of pickle to it and usually like to top off the potato salad with green tabasco sauce. Sooooo yum. I make up a ginormous batch of it and my sister and I polish it off within two days. =)
