Delicious Penne Bake

Ingredients (use vegan versions):

    6 cups cooked penne pasta
    1 tablespoon olive oil
    1 onion
    3 garlic cloves
    1 - 540 kg package veggie ground round
    1 - 28 oz can crushed tomatoes (or a jar of pasta sauce)
    1 teaspoon oregano
    1 tablespoon vegan margarine
    1 tablespoon flour
    1 cup soy milk
    1/2 cup soy cheese

Directions:

Preheat oven to 400 degrees F.  Grease a 9x11" casserole dish.

In saucepan, cook onion and garlic in olive oil.

Add veggie ground round, crushed tomatoes, and oregano. Stir.

Reduce heat and heat until bubbling.  Add cooked pasta. Pour mixture into casserole dish.

Sauce: Melt margarine in pot, stir in flour.

Slowly add soy milk, while whisking.  Heat until sauce boils and thickens.

Add soy cheese and pour on top of pasta.

Bake uncovered for 20-25 minutes.

Serves: 4

Preparation time: about an hour.

This was pretty okay, but kind of bland. I added an extra clove or two of garlic, and some eggplant. Next time, I'd add some more tomato, maybe even tomato sauce, definitely some more spices/herbs, and maybe some chili peppers or something.
