Double Chocolate Oatmeal Banana Cookies

Ingredients (use vegan versions):

    1 cup flour
    1 1/14 cups oats
    1 teaspoon salt
    1/2 teaspoon baking soda
    2/3 cups brown sugar
    2/3 cups white sugar
    1/2 cup cocoa powder
    3/4 cup chocolate chips
    1 banana
    3/4 cups vegetable oil
    1 tablespoon vanilla

Directions:

Preheat oven to 350.

In a big bowl, mix all the dry ingredients (except the chocolate chips).

In a small bowl, mash the banana and mix in the vanilla.

Add the banana bowl and the oil to the dry ingredients.

Mix until it is doughy, then fold in the chocolate chips, (add more to your taste).

Form 1 inch balls and place them on the cookie tray (they flatten out pretty big, so leave plenty of room).

Bake at 350 for 8-10 minutes, let cool.

Eat!

Serves: 20 cookies

Preparation time: 20 minutes

Cheesy  Yummy!  I may have added too much oil because there was some in the bottom of the mixing bowl but they still turned out very good!

I made these tonight.  They were actually the first thing I have baked since becoming vegan!

I thought they turned out well.  I would maybe use a bit less oil as it seemed like the batter was a bit greasy.  I would also probably use a bit less chocolate chips.  There were quite a bit of chocolate chips left in the bottom of the bowl and not really any batter to mold them with to make cookies.

The ones that I baked for about 9 minutes turned out really good.  They were chewy and you could really taste the banana in them.  My husband who is a big time omni loved them. Smiley

If you can't convince them, confuse them.

These are the by far the best cookies I've made!  Everyone loves them....I made them for the Super Bowl party we went to yesterday and they were the first ones gone among all of the other non-vegan cookies and brownies...I highly recommend them!  Thanks!

These cookies turned out exactly as I would've hoped for!!  Cheesy  Tawtolly yummy. Tongue
The only thing I adjusted was use a little less oil and some applesauce in its place (around 1/4 cup).. I think this helped give it a bit of a pleasant cakey texture.

these cookies are pretty good.  the banana flavor was much stronger than i expected, but they also live up to the 'double chocolate' title, which was what i was hoping for. hubby liked 'em too! Thumbs Up
