I woke up this morning & the first thing that popped into my mind was, "Mandarin Salad"

So of course I had to make it.
The original recipe makes a lot of salad...too much for just hubby & me. If our son was home for supper, I might have made the whole thing. Anyways, I halved the recipe & there was still enough to fill my biggest pyrex bowl. The picture doesn't show how much it makes because I wanted you to see how beautiful & colourful it is up close

Tip- when the almonds have been sauteed & are cooling, give them a stir every once in a while or they will stick together....then you have to hit them with something to break them apart again. Yes, I did that tonight
