Mandarin Salad

Ingredients (use vegan versions):

    1 head iceberg lettuce
    1 head romaine lettuce
    6 green onions, sliced
    2-16 oz cans mandarin oranges, drained (save the juice)
    2-7 oz packages slivered almonds
    3 tablespoons sugar
    DRESSING:
    1/2 cup vegetable oil
    1/4 cup sugar
    1/2 cup vinegar
    1/2 teaspoon salt
    dash of pepper
    2 drops Tabasco sauce
    4 to 5 tablespoons mandarin orange juice

Directions:

Saute almonds with sugar and a little bit of margarine. Cool.

Cut up the vegetables to your liking and mix together.

Make the dressing and pour over the vegetables.

Top with the almonds or mix in the almonds.

this salad is wonderful!  I leave out the iceberg and double the romaine.

I woke up this morning & the first thing that popped into my mind was, "Mandarin Salad"  Grin So of course I had to make it.
The original recipe makes a lot of salad...too much for just hubby & me. If our son was home for supper, I might have made the whole thing. Anyways, I halved the recipe & there was still enough to fill my biggest pyrex bowl. The picture doesn't show how much it makes because I wanted you to see how beautiful & colourful it is up close  Smiley

Tip- when the almonds have been sauteed & are cooling, give them a stir every once in a while or they will stick together....then you have to hit them with something to break them apart again. Yes, I did that tonight  Embarrassed

i had a salad just like this at o charleys. i love it! i use candied pecons. and i added dried cranberries. and strawberrys and it is soo good!. also the salad would also be good with "chicken strips"(vegan of course). so i would say i love this salad! Smitten
