Yum Yum Broccoli and Tofu

Ingredients (use vegan versions):

1/4 of firm or regular organic tofu
    1/2 to 1cup broccoli
    1 teaspoon chili oil
    2 teaspoon soy sauce
1 tablespoon vegetarian barbeque sauce (you can find this in a 99 Ranch Market)
    2 cups water
    1 cup rice

Directions:

I was hungry and wanted to make something, but this is all I had in the fridge and well it stuck.

Cook the rice according to directions.

While the rice is at its last ten Minutes, slice your tofu and then put it in a heated skillet.  When fried to your liking, mix in the broccoli.

Add the chili oil, soy sauce and barbeque sauce.  Fry on low heat.  When done add to the rice .

Enjoy

Serves: 1 (depending how much you want to eat)

Preparation time: 25

This was simple but good.  Be sure to turn down the heat when adding the soy and bbq sauce because it splatters....my poor clean stove!

My husband wanted broccoli, rice, and soy sauce...so I came to this recipe, but ended up doing my own thing...

I cooked rice, and sauteed broccoli with stems in the wok..for a few minutes. Then I did the tofu separately (I don't think it would get done/golden enough when cooked with all that broccoli?)..I actually burned the outside of the tofu..but it wasn't too bad. I then quickly sauteed some garlic and white corn, and made a sauce with cornstarch, water, soy sauce, sriracha, and sesame oil...and added it all together. Healthy and filling!
