Best Banana Bread

Ingredients (use vegan versions):

    3 large bananas, mashed
    2 tablespoons olive oil
    2 cups whole wheat flour
    3/4 cups sugar
    1 teaspoon salt
    1 teaspoon baking soda

Directions:

Preheat the oven to 350 degrees F.  Spray the bottom of a loaf pan with nonstick cooking spray.

Mix the mashed bananas and olive oil in a large bowl.

Stir in the flour, sugar, salt, and baking soda.

Pour the batter into the sprayed loaf pan.

Bake for 55-60 minutes.  Remove and let cool for at least 15 minutes.

Preparation time: 60 minutes

What a nice surprise to find this recipe. My 17-month-old son is allergic to dairy, eggs, soy, peanuts, and corn so it's been really hard finding a dessert recipe for him. I made this today and was pleased by the simplicity of the ingredients and the directions. If I were making this for myself I would have preferred some spices and perhaps some walnuts but this was absolutely terrific for my son and he thought it tasted wonderful. There were no leftovers on his plate at snack-time!

Nummy! I didn't have a bread pan, so I made the batter into muffins instead. I also added cinnamon and a little more baking soda, and added some soy milk to make the dough easier to handle. They were so delicious!

since I'm not a big fan of refined cane sugar I used maple syrup instead (about half a cup) and it turned out great anyway

I made these into muffins and took them to a friend's shore house- her 6 omni siblings gobbled ALL of them up in less than 20 minutes- no joke.  It's delicious and so easy.  One thing is, mine is always a little too dense, so I add about 1/4 cup soymilk and it's perfect.

I have made this a few times and am still amazed how something this easy can be this good... I have added chocolate chips each time, but thanks applelover - my husband is freaking out since I added the cinamon.  He loves cinamon and I never thought to add it to banana bread...

Wow! I was super impressed with this recipe. I can't believe so few ingredients could make such a moist, fantastic bread. I find that substituting the sugar with 1/2 cup maple syrup gives it a nice, easy texture to work with. I added some cinnamon and it was perfect. This is my kind of recipe, simple, easy, and delicious!  Thank You!:)

This is a great way to use up dumpstered bananas!  I made the following alterations:  1/2 cup of agave instead of sugar, and add 2 teaspoons of cinnamon.  Very tasty!

This was really, really, really good. I've made it a couple of times, and always a success! I only used 1/2 cup sugar and it's still sweet and wonderful, one tbsp oil, and I did add some soymilk - about 1/4 cup-1/2 a cup. Yum.

I was so impressed with this. It was my first time making banana bread, and I cant believe how well it turned out! I too made muffins with it and added walnuts and about an 1/8 cup of flax seeds. I used half a cup of molasses in place of the sugar, and 1/4 cup rice milk to make it easier to scoop into the muffin pan. Easy, delicious, and quickly consumed by my roommates. Smitten
