Chai Tea Breakfast Marathon Muffins

Ingredients (use vegan versions):

    1 cup - whole wheat Flour
    1 cup - rolled oats (or any oatmeal)
    1/2 cup oat bran (any bran cereal will due)
    2 teaspoon baking powder
    1 1/2 teaspoon cinnamon
    2 tea bags of Chai Tea (or any other black tea)
    1 cup of hot water
    1-2 bananas  mashed (can substitute 1 cup of apple sauce or other fresh fruit).
    1/2 cup maple syrup
    1 Tablespoon of oil (canola oil will work)

Directions:

Preheat oven to 375 degrees

Brew both bags of tea in the 1 cup of hot water.

Mix dry ingredients together in a large mixing bowl.

When tea is brewed, remove tea bags and add tea to dry mixture.

Add the remaining wet ingredients and mix well.

Spoon into prepared muffin tins. Bake at 375 degrees F for 20 to 25 minutes.  Makes 12 muffins.

I eat a few of these the morning before a marathon. There is just enough caffeine to get me going, without dehydrating me over the course of the race. Furthermore, the oatmeal, bananas, and oat bran are staples in most runners race day breakfast meals.

Serves: 10 - 12 muffins

Preparation time: 25 min

I modified this recipe using soy flour instead of wheat flour, which I suppose contributes to the lack of height, as soy flour tends not to rise as much as regular flour.

Wow. This was DELICIOUS.  Grin So soft and moist. Perfect right out of the oven on a cold day (even though it's 105 here)
I didn't have chai so I used Tazo Green ginger. I figured it was spicy like chai. So much tastier and healthier then some of the other healthy muffin recipes I've used.

These were yummy for breakfast.  Mine were a bit on the dense/chewy side, probably because I used steel cut oats (all I had). They certainly added an interesting texture.  I also added some blueberries and pecans.  My parents stopped by for a suprise visit this afternoon and these were still sitting on the kitchen counter.  My omnivorous, meat-and- potatoes father kept ducking into the kitchen all afternoon and ate 5 of them one by one!  I think he liked them better than I did!

I used brown sugar instead of maple syrup and I added extra because I was afraid the tea would be too spicy for my boyfriend... but I definitely didn't need extra sweetener because the tea mellowed out once these were baked.  since I subbed dry sweetener, I did add some soymilk (1/4 cup?  less, maybe?) and these were nice and moist for the two days they lasted.

I also threw in raisins, dried apple bits, and sunflower and sesame seeds.  with or without them, this recipe is highly recommended!  it was worth shelling out $4 for a box of chai teabags for!

Wow these sure were yummy! I made mine with the applesauce since I was out of bananas and I also used KT22A's idea of adding sunflower and sesame seeds and raisins! I made a batch of these 2 days ago and they're already gone so I'm making another one today and am sure I'll be making more in the very near future! Thanx for a great creative recipe!  Cheesy

For whatever reason, these muffins didn't rise for me, so they were shaped like little, delicious hockey pucks.  I followed the recipe exactly.  I wonder if it has something to do with my oven.  Regardless these muffins tasted really good, I ate a whole bunch of them, and my boyfriend liked them too.

i forgot to mention that i added about 1/3 cup coconut and a handful of raisins. i also used applesauce in place of the banana and skipped the oil completely.

Very tasty.

I used 2 c. of whole wheat pastry flour instead of flour/oatmeal because I was out of all oatmeal except for steel-cut; used 1/4 c. xylitol and 1/4 c. agave nectar instead of the maple syrup, used applesauce instead of bananas; omitted the oil and added 1/2 c. malt-sweetened chocolate chips.  Perfectly moist and fluffy after 20 minutes.  Thanks for the recipe!

This recipe came out horribly for me.  Sad  I followed the recipe exactly except for 1/2 cup oat bran because I had none. They didn't rise at all and refused to cook all the way. I kept them in there for over 30 minutes and they still were raw inside and wouldn't peel off of the muffin wrappers. They sounded so good, too.  Cry

I just joined the site to say that these were amazing.

I used wheat bran instead of oat bran and added 1/2 c each of raisins and sunflower seeds as suggested above.  My roomate loved them - they are very moist and dense and I guess reminded him of something his old babysitter used to make!  I've been taking them to work for breakfast and they're probably the most healthy thing I can eat.  Thank you!
