Bamiya - Armenian Okra and Apricots

Ingredients (use vegan versions):

    about 3 large handfuls of baby okra
    2 medium onions, sliced
    1 and 1/2 cups vegetable broth (360 ml)
    1/4 cup tomato paste (60 ml)
    about 15-20 dried apricots
    juice of 1/2 lemon
    salt to taste
    olive oil

Directions:

Sauté onions in very small amount of olive oil until they turn translucent.  Add broth, tomato paste, salt. Bring to boil. Add lemon juice and okra.  Arrange apricots on top of all this.  Simmer for one hour.

This is a nice side dish or can just be served with rice/salad as a main meal.

People who don't like okra because of sliminess: it seems the longer you cook it, the less slimy it is. I have okra phobic friends who really like it.

Serves: 2-4 people

Preparation time: 1 and 1/2 hours including cooking time

Generally, the sliminess of the okra can be removed by adding something acidic (like tomatos, tamarind or lemons or if you're vegetarian, yogurt) and letting it stew with that at a medium high temperature. The acid somehow breaks down the polysaccherides that cause the mucous-y feeling...
