Cheesy Broccoli Rice Casserole

Ingredients (use vegan versions):

    1 stalk of broccoli, broken into little flowerettes
    1-8oz pkg. or 1 cup of grated vegan cheddar cheese (also can use Soymage)
    3 cups of cooked brown rice
    1 can cream of mushroom soup or other creamed soup (check ingredients)
    1 medium onion, diced
    1/2 cup water
    salt & pepper to taste

Directions:

Preheat oven to 350 F.

In medium size pan pour in 1/2 cup of water and add broccoi and diced onion. Simmer over medium heat until broccoli is just slightly soft. Save water.

In a greased casserole dish, add cooked rice, broccoli, onions, and their water along with cream of mushroom soup. Mix well. May need to add more water if mixture is too thick. . Add salt and pepper to taste.  Sprinkle grated cheese on top.

Put in oven and bake for about 20-25 minutes, or until knife goes through dish and comes out clean.  This is unbelieveably delicious.Smiley

Serves: 4-6

Preparation time: 20 mins.


This was very yummy. We are vegans so we couldnt use the cream soup. So, I just used a little soy milk mixed with a little pepper instead. It worked out great. Thanks!

YOu can find creamed soups that are vegan.

This is a wonderful recipe!  I add a little more broccoli than what is called for but that's simply because I love broccoli.  Quick, easy, tasty and healthy!  What more could you ask for?

This recipe is great!  I made it for my family and a party and none was left over!  I added one thing and it tasted great:I  crushed some corn flakes in a bag, tossed them with a little margarine (which probably isn't neccesary if you don't eat that) and then spread it on top before baking!  It was great!

This recipe was great!  I put the buttered cornflakes on top, and that was just...great!  My mom said it needed more broccoli, but other than that, everyone liked it...it could use a little salt and maybe some added mushrooms.  Loved the taste and how light it was!

I substituted whole grain bow-tie pasta for rice and it tasted wonderful!  Just cut down on the amount of water because there is no rice to absorb it all.  I topped it off with some bread crumbs (mixed with Parmesan cheese) and it was divine Grin

Just a note for this great recipe...
I buy mushroom broth in the carton then whisk in some tofutti
sour cream. Instant cream of mushroom soup!

So delicious, quick and easy to make! I actually blended corn & (soy)milk for the "soup" to add another flavor and used barley instead of brown rice. Really good for those times when you need a quick, healthy dinner!

Oh my..... my kids loved this. At first they refused to even try it because they thought it looked bad. But, they tried and had seconds! I did not precook the broccoli, I just covered the casserole and baked it for about 45 minutes to and hour. I used creamy portabella mushroom soup from a box (it was vegan), then I added a couple spoons of better than sour cream. I only had a small portion of vegan cheddar (not even 4 oz, so I add a couple tablespoons of nutritional yeast. I also added a few cloves of garlic because I just feel wrong cooking without it. Thanks, great recipe.

Has anyone ever tried making this with nutritional yeast instead of the shredded vegan cheddar?  I've never found a vegan cheese that I've liked.

yeah, i made this recipe and it was really bland. in the original "chicken divan" recipes it has you add mayo to the mushroom soup. i might try that next time. i even made a cheese and bread crumb topping for this. that was the best part.

this recipe is really yummy. i make it all the time. i don't put in the onion, though, and i use brown rice and add corn and peas most of the time.

I added fresh garlic to this, but should've added more seasoning since, except for the cheesy parts, it was a little bland. Recipe is good and easy to modify by using asparagus & carrots, or adding mushrooms or celery.
