Barbecued Eggplant

Ingredients (use vegan versions):

    1 eggplant
    Barbecue Sauce
    salt

Directions:

Preheat the oven to 350 degrees. Peel and cut the eggplant into 1/3-inch thick slices. Salt the slices.  Place on a rack or colander and let stand for 30 minutes. Wipe off salt with a clean kitchen towel.  Lay the slices out on a lightly oiled baking sheet.  Brush on barbecue sauce. Bake for 15 minutes. Turn over, brush with barbecue sauce, and bake for 15 minutes more or until the eggplant is tender but not mushy.

I thought this was pretty good...although i thought 15mins on each side seemed a bit too long (although, that could have just been my oven who seems to have a mind of its own)...we put ours on bread and enjoyed them as sandwiches...my picky 3yr old even ate it!

hmm, this was a good way to eat that aging eggplant I wasn't excited about eating.  I know it's a simple recipe, but I wouldn't have thought of BBQ sauce!  I skipped the salt step because I didn't plan ahead, but it tasted fine.  would have been good on a sandwich with some veggies, like Emily said.

I cooked these on the grill. I thought it was okay but it may have just been the barbecue sauce I used (Annie's Naturals hickory maple). I'm not sure I enjoyed the flavors together but it was fun to grill something for a change!!  Smiley
