Crispy Cauliflower w/ Olives, Capers, & Parsley

Ingredients (use vegan versions):

    12 finely chopped Kalamata or Greek olives (or any other olives cured in brine) Dont use canned, pitted olives that are in water.
    4 tsps drained capers, finely chopped
    2 tbsps red wine vinegar
    4 tbsps extra-virgin olive oil
    1 whole cauliflower chopped into flowerets
    4 tbsps chopped fresh Italian (flat-leaf) parsley

Directions:

In a small bowl stir together olives, capers, vinegar and 3 tbsps oil.  Set aside.

In a large non-stick pan heat remaining oil over med-hi heat until hot and cook cauliflower, covered (with foil if you don't have a lid for your pan), stirring occasionally, for 10 minutes.  Uncover and sauté cauliflower until tender and browned, but not mushy -- about 5-10 minutes more.  Transfer cauliflower to a large bowl and toss with the olive mixture and parsley until well coated.  Season with salt and pepper if desired.  Arrange on serve platter and serve at once.

Note: Kalamata olives come in a jar in the olive section of the supermarket.  Or, you can get them at a good deli.  Also, you can reduce the amount of oil depending on your taste and/or size of the cauliflower.

Serves: 4-6.

Preparation time: 20 min.


The combinations of flavors is great.  I also mixed this with leftover rice for a cold salad the next day (It doesn't reheat well but cold it is great).  If you wanted to reduce the amount of calories, you could reduce the amount of olive and still enjoy the dish.

I am not a huge olive fan, but my boyfriend is so I made this dish. It was very good and my bf loved it. I think this is the perfect dish for anyone who loves olives, though I also found it quite satisfying, though maybe a bit salty (but that's just how olives are so this shouldn't be unexpected). A nice change of pace from more standard dishes with a very strong flavor due to the olive/caper combination. Try it!

Very flavorful, I really enjoyed this! I used a little of the fluid the capers came in to add to the lidded pan to get a steaming effect and then added chopped roma tomatoes in raw, at the end.  I might add a bit of fresh, minced garlic next time.  I was excited when I found this recipe, it was definately a unique idea!

this was really good, but i think it would be an really good idea to add the caper juice stuff to steam the cauliflower, mine didn't come out softened at all. overall i really liked it.

This was entirely too vinegar-y, and I had even reduced the amount of vinegar to begin with.  I think that perhaps using balsamic vinegar rather than red wine vinegar might improve the taste.  Even so, the cauliflower was tasty, and the flavors of parsley, kalamata olives, and cauliflower was pretty pretty tasty.

Had a whole head of cauliflower, so I had to use it somehow, so I tried this recipe.  It actually wasn't too bad.  I might reduce the olive oil a teeny bit.  It was colorful.  I let the cauliflower cook/sit too long, it got too soft.

I didn't have parsley and I also switched the vinegar for balsamic - I really liked this. Very good.

truly AMAZING!
i am huge cauliflower and olives fan, and i wonder why i didn't make it before. soo good. salty/vinegary/pickly.. yum!
i've made this several times now. what i do is put the cauliflowers in a pan with a bit of water, cook covered until done, add about tablespoon or two of oil and fry. i don't add oil in olive-capers-parsley mix and i add it right in pan.
i've used pickled cucumbers for capers. next time i'm going to try chopped pickled mushrooms. can't  wait!

This recipe is divine--restaurant-worthy even. We made only one small adjustment, to lessen the amount of oil used. The first time we made it we used the full amount. The second time we used half the amount. I think it would still be good using one quarter the amount, just enough to saute the cauliflower. This is becoming a regular on our weekly menu and I wouldn't hesitate to serve it to anyone, omni and veg*n alike. It's really not a veg*n recipe per se, more an accidentally vegan dish. Anyway, we love it--warm or cold.  Smiley

I followed the recipe exactly.  I thought it was awful!  The sauce was not terribly flavorful.  It just tasted off to me.  Perhaps others will have some suggestions for me.  It was such a pretty dish and I was disappointed in the flavors, because I really really wanted to love this recipe.

I personly didn't like it. I threw half of it away... but maybe someone else will like it. I didn't know what capers is, and I think I just don't like it. but if someone like capres maybe he will like also this recepie. for me it was.. mm just not tasty.

I really like this.  The flavor is a lot more mild than I would have expected.

I made a four-course meal with my boyfriend when my mom and grandma came to visit.  They really loved it, too.

It's kind of funny, because my mom always complains that we spend so much money on food (we're college students, but we just can't eat awful, cheap food).  She sure didn't complain when she came over for dinner...
