Scrumptious Squash SaladIngredients (use vegan versions): 2 good size squash
1 tablespoon extra virgin olive oil
1 tablespoon fresh squeezed lemon juice
2 cloves garlic
salt & pepper to taste
Directions:Clean and slice squash into 1/4 inch slices. Steam in a steamer for 5 minutes. Set aside and place into refrigerator until they become cool(er). For the dressing, mix together all remaining ingredients. Make sure the garlic is finely minced. Pour over squash and proceed to devour. Delicious!
Serves: 2.
