Sweet Pepper Stew

What you need: 

2 tablespoons olive oil
5-6 peppers (green, orange and yellow), sliced
2 cloves garlic, crushed
1/2 cup white wine
salt and black pepper, to taste
juice of 1 lemon (save lemon)
crusty bread, to serve

What you do: 

1. Put the oil into a large heavy saucepan, heat slowly over a low heat.
2. Add the garlic, peppers, lemon juice, wine, salt, pepper, and lemon halve.
3. Cover with a tight lid, and cook over a low heat for approximately 1/2 hour.
4. Serve with some crusty vegan french bread.
