Kristins I can't believe its healthy Steamed Kale

Ingredients (use vegan versions):

1-2 bunches of kale (I prefer organic, locally grown)
    olive oil
    lemon juice
    garlic
    toasted pine nuts

Directions:

Clean kale, remove stems, and tear into bite sized pieces.

Place a vegetable steamer over a pot of boiling water, and place the kale into the steamer.  Steam until the kale is tender, usually about 2-5 minutes.

Remove kale from heat, put into a large bowl, and set aside.

Heat up a dry skillet and place pine nuts into the skillet for one minute.  Be careful not to burn the pine nuts.

In a small bowl, whisk olive oil, fresh garlic, kosher or sea salt (ground), and lemon juice.

Toss the olive oil mixture onto the kale, and top with pine nuts.

This is excellent served as a side dish with soup, or by itself!

I don't use exact measurements, so feel free to experiment.

I prefer to buy organic kale, grown by my local co-op.  It tastes better, and the money I spend is going back to the people who grew it.

Serves: 2-4

Preparation time: 10 minutes

This was very easy and quick to throw together.  I just tossed the lemon juice and garlic in the pan with the kale and let it cook down.

I make kale almost the exact same way all the time (sans pine nuts, because I'm poor), and it's always great.  I also toss everything together in the pot.  Sometimes the simplest recipes are the best.

Great recipe!  I love kale...the pine nuts made this extra special but even without them it would be great.
