Better than Sonics Onion Rings!

Ingredients (use vegan versions):

    1/4 cup flour (any kinda work but I like whole wheat)
    salt
    pinch or baking powder
    1/8 of a block of Silken firm tofu
    1/4 cup soy milk
    1 tablespoon lemon juice
    1 medium onion
    oil

Directions:

Slice the onion into semi thin pieces, & separate the slices into rings.

Mix flour, salt, and baking powder together in a small bowl.  Throw the tofu soy milk and lemon juice in a blender & blend until all the tofu is beat-up. Combine wet to dry and stir that stuff up! (you may need to add a lil more soy milk)

Heat oil in a frying pan. Dip each ring into the batter and fry them all till they are golden brown.

Drain on paper towels, throw on some salt and serve with a friend or alone (you'll probably wanna gobble them all up yourself, but I shared with my mom!)

WARNING:  These may become an addiction!

Serves: 2

Preparation time: not long!

These were really really tasty!
I just doubled the recipe (for one very large onion) and threw all the ingredients in my vitamix. I had exactly the right amount of batter.
I would have never thought to blend up silken tofu and use it this way... I may even try this silken tofu batter on some regular tofu chunks for chick'n nuggets.

The only reason I gave it 4 stars and not 5 was because my onion rings kept sticking to the pan at first (I'm sure this was my fault and the temp of the oil or something.) I'm going to make it again for sure.

Oh and I've never had a Sonics onion ring so I don't know if they are close or what.

I know what is for dinner now and it is not onion rings! I was waiting for a really good batter recipe to turn up so I could deep fry some unchiken cutlets from healthy-eating.com.  The kids have been clambering for some fried chicken, which I would not let them have, but this will surprise the dickens out of them tonight.

I'll but in some onion rings because I like them!

These were great! I added some garlic powder, dried parsley and Mrs. Dash Table Blend seasoning to the batter. Loved them! I wasn't all too crazy about frying them in oil but it was a nice treat.

These were delish!  I've been craving something fried/bad/tasty, and these were perfect.  I did a double recipe, and my husband & I shared them.  I also used the oil to fry some French fries, so we felt very "American".  It was a bit too much for us, so I put the rest in the fridge for tomorrow.  HA!  Our 16 year old inhaled them when he found them.  Yum!

I find if I coat the onions in a batter of some sorts - some soy milk/soda water (whatever works for you), flour, salt and spices and then dip them in panko crumbs, then the onion rings stay super crispy even when they've cooled off.  They end up being delicious and they don't stick together in the pan!  I'll post my recipe on here because you can use it for onion rings, or zucchini or any delicious veggies!

These are so good! I was surprised at how good..definitely at least AS GOOD as Sonic's..plus a little bit healthier..and w/o all that gross fryer oil. It is a little bit off putting to fry them..but it's ok once in a while, right?! Love these..I'll keep this batter in mind! Thanks. Smitten

Also, I added lots of pepper, a little garlic powder, my tofu was not silken (but firm), and I added lime juice instead of lemon. They were fabulous!

Wow, these were yummy.  We don't have Sonic here so I have no comparison.  I did not tell my husband that they had tofu in them until after b/c he has a fear of tofu but he loved them-so did my 10 year old.  Since I have never made onion rings before it took me a bit to get the timing right.  Just put enough batter to lightly coat onions and give them lots of room in the pan.  I put about a 1/4 inch of oil but they probably would have cooked better in less.  This recipe only made about 3/4 of a medium sized onion for me.  May need to double it next time.  I will absolutely make these again.  Oh, I can find Firm Tofu and Silken Tofu but is silken firm tofu something different altogether? I used silken and it worked.

I made these again today, and they were even better! This is a fabulous recipe. I added lots of cayenne pepper to the batter..and it added a nice spice. I suggest that everyone try this! : )

I loved these!  I haven't had onion rings in forever and I have never tried to make them before... 

I loved this batter and I am already thinking of a million other thing to use it for....yum!

Also, I doubled the batter and made it really thick.  I think that its important to have the oil nice and hot before you toss them in and stir gently to prevent sticking.
