Garlicky CarrotsIngredients (use vegan versions): 3 tablespoons margarine
2 cloves garlic, crushed
4 large carrots, peeled and sliced crosswise 1/2 inch thick
Salt to taste
1 teaspoon parsley flakes
Directions:Melt margarine over medium heat. Add garlic and sauté until aromatic (but do not brown). Add carrots, sprinkle with salt, cover and simmer for 15-20 minutes, stirring every once in a while, until carrots are tender. Add parsley and mix just before serving.
