Chipotle-Lime Mashed Sweet PotatoesIngredients (use vegan versions): 3 lbs. sweet potatoes
1 1/2 tablespoon margarine (such as Earth Balance)
1 1/4 teaspoon chipotle powder (feel free to adjust amount according to personal taste)
Juice from 1/2 large lime
Directions:Peel the sweet potatoes, and cut into cubes. Steam the cubes until soft and mash able. Then transfer to a large bowl.
In a small saucepan, melt the margarine, and whisk in the chipotle powder and lime juice. Pour the mixture into the bowl with the sweet potato cubes, and mash it all with a potato masher until smooth.
Serves: 4-6 side
Preparation time: 20 min.
I thought these were great! I was unable to find chipotle powder at the store, so I finely grated dried chipotle peppers to get a similar result. We used a little more lime and pepper than the recipe called for, thanks for submitting this!

You could definitely use canned chipotles too, if you are unable to find chipotle powder. They come in this delicious smoky spicy sauce called adobo sauce. Look for them in little cans in the ethnic foods section of your grocery story. For my taste, I'd just mince one finely until its practically a paste and then stir that in with the butter. Start off with a small amount though, because these peppers can be hot!

These were very good -- the balance of the sweet from the potatoes w/the spicy of the chipotle works very well. I also used a dried cipotle pepper in lieu of the powder.

MMM I really liked this recipe, it was an excellent alternative to the traditional marshmellow-y sweet kind. I had 3 sweet potatoes, 2 idaho potatoes, and 4 sticks of carrots so I mashed them all together, then put in the lime and chipolte and it was GREAT! thanks a bunch!
