Squash & Tofurky

Ingredients (use vegan versions):

    1 Baseball sized Acorn Squash cut into big bite sized chunks
    1 Small handful of chopped green onion
    2-3 Slices of Smoked Tofurky, diced
    1 Sprinkle of garlic powder
    1 pinch of nutmeg ( very small pinch)
    a little margarine
    some extra virgin olive oil
    fresh cracked pepper and salt to taste

Directions:

Heat margarine and olive oil in a pan. When the margarine is melted throw in the squash and onions. Sprinkle in the garlic and nutmeg. Season with salt and pepper. When the squash is almost tender throw in the diced Tofurky. Cook until the squash is fork tender and slightly brown.  Reseason with salt & pepper.

Grab a fork and dig in!! Very simple but absolutely delicious, trust me!

I came up with this about an hour ago so I haven't been able to play around with it any. Feel free to add any number of things that you like, maybe some mushrooms, minced garlic instead of powder or some tasty veggies. But, as is, its really, really wonderful and not needing a thing.

Serves: 1

Preparation time: 15-20 minutes


Very good. I've used Tofurky sausage once and veggie bolonga once. Both turned out really good. I add some Braggs too. I cook it till whatever meat im using gets a bit cripsy. Thanks!

I was a bit skeptical, but it is so delicious! So much flavor. Smiley Hearty and filling but not too heavy, which is perfect. Would make a fantastic side dish at Thanksgiving or something like that.

I doubled the recipe because the acorn squash I had was pretty big, and left out the salt, green onions and just used more olive oil instead of margarine. And instead of Tofurky, I used Vegan Dad's seitan lunch meat recipe. To compensate for the lack of "smoke", I added a few dashes of liquid smoke to the squash/meat mixture. I think it would be great with Tofurky though, or really any good meat substitute. Definitely going to make this again!
