Davids Potato Zaire

Ingredients (use vegan versions):

    4 large potatoes (peeled)
    2 cups chopped spinach
    1 cup olive oil or vegetable oil
    2 garlic cloves(minced) (or teaspoon of garlic powder )
    2 cups garbanzo beans
    1 red pepper(seeded+ diced)
    1 green pepper(seeded + diced)
    1 medium onion (diced)
    1 teaspoon oregano
    1 teaspoon dried basil
    Sprinkle of red pepper powder

Directions:

1) Boil potatoes 8 minutes.

2) Add spinach and cook until potatoes are tender. Drain pot.

3) Heat oil in large, deep frying pan until lightly bubbling.

4)Add potatoes,spinach,beans and remaining ingredients (except red pepper powder).

5) Sautee(stirring with spatula) until potatoes become slightly creamy and ingredients are heated through.

6) Sprinkle all over with red pepper powder. Cover pan; simmer at medium heat 3 mins. Serve and enjoy!

Serves:  4

Preparation time: 45 min.


Thats ALOT of oil...I think I would water sauteeing instead.  Otherwise, sounds good Smiley

i only made a 1/4 recipe since i only had one potato, but that is definitely 2 full servings..

i didnt have any basil, so i just replaced it with more oregano and i used coconut oil instead of olive..

i was wary that this wouldnt be flavorful enough w/o any salt, but it is absolutely delicious! My chickpeas were already salted from cooking them and letting them sit in salty water for a day, so they added enough salt to the dish..

i also used a heaping 1/2 cup of chickpeas for the 1/4 recipe so there is a little bit more than the recipe calls for, but not much hehe

and for the red pepper i used cayenne.. and was very generous with it Wink

this stuff is SO good and i will definitely make it again.. as my husband said "its f*cking tasty!" haha..

to the previous poster that said there was too much oil, im going to have to disagree due to the large amount of other ingredients.. though i did use slightly less than a 1/4 cup.. probably more like 3 tablespoons.. so if the recipe was brought back up to the full amounts then I'd say that 3/4 cup oil would be just about perfect.. in a 1/4 recipe the little less than 1/4 cup oil was very helpful in getting the potatoes nice and creamy like it calls for

oh yeah, one other thing was i diced the potatoes before i boiled them so they would cook faster and while i was frying them in the oil with everything else i sorta mashed them up a bit to increase the creaminess...

but, for sure try this.. YUM!

I really enjoyed this too! Although I wouldn't add the greens until near the end.

I just made this today and it was wonderful! However, while i was making this, i discovered my peppers were no longer fit for human consumption.  So i added about 4-5 cloves of minced garlic and a bit more basil.  Smiley
