Yummy Stuffed Bell Peppers

Ingredients (use vegan versions):

    8 (or more or less) different colored bell peppers
    3 cups white rice
    1 jar spaghetti sauce (I use all natural kind)
    3 Boca burger patties (optional)
    1 can pinto beans
    white or red onion chopped
    3 teaspoons chopped garlic
    various spices: pepper, salt, garlic powder

Directions:

Cut tops off bell peppers and take the core and seeds out so that bell pepper is empty. Set aside.

Cook rice. In large pan, grill boca burger patties and break up in to small pieces.

Chop 1 green or red bell pepper and mix with onions.

Mix rice and boca burger in pan on warm heat and add spaghetti sauce. Add bell pepper and onion mixture and beans. Add spices and garlic according to your liking.

Stuff each individual bell pepper to top. Bake in oven at 250 degrees for ten-fifteen minutes. Put the tops back on the bell peppers, set out and enjoy! (top with vegan cheese if you want!)

Serves: App. 8

Preparation time: 30 min


I loved your Stuffed Bell Peppers! I used a 15 oz can of tomato sauce instead of the spaghetti sauce, for convenience sake.

Tried this today Smiley Yummy! Thank you for the inspiration to whip up something healthy in a giffy!  Changed it a bit because I am lazy/don't have enough time which ever you want to call it LOL We used a box frozen of microwavable (3 minutes!) brown rice (trader joes carries this and I have found it at a local supermarket), all three 10 oz packs, a pack of ground round i think that's by yves. a jar of spagehtti suace, and pepper salt and lots of garlic powder Smiley I also made a white cheese sauce while it was in the oven.   I adapted the cheese recipe from the uncheese cookbook. (basicly less spices and more fat) 1/4 cup nutritional yeast 3 tablespoons cornstarch 1 cup plain soymilk 1/4 cup water 2 teaspoons lemon juice 1 teaspoon salt 1/4 Earth Balance buttery spread Mixed together the corstarch, salt and yeast first. then added the rest (EXCEPT THE EARTH BALANCE) and mixed it until it was smooth.  Then because I am lazy i use the microwave in 30 second to 1 minute increments untill it is NICE and THICK.  While its hot mix in the earth balance Smiley and then spoon over they bell peppers.  We did this after baking but im sure it would be fine baked with it.  Came out deliciuos!!!! I had some trouble with this recipe.  The stuffing wasn't very difficult to make, but there was way too much of it and I made 9 bell peppers.  Also, cooking them for 12 minutes was not near long enough.  Perhaps a half an hour would have been better.

Heres a great really easy variation (for two - multiply the recipe if necessary) 2 large peppers 1 box of 4 Boca Italian Sausages 1 package Cous Cous - Mediterranian is good 1/2 cup salsa or tomato sauce 1/3 block of veggie cheese Heat oven to 350.  Cut off the very tops of peppers and place, open side down, in a pyrex bowl with about 1/2 inch of water.  Cook them for 15 mins.  Put the Sausages in the toaster oven for about 10 mins or until hot but not crispy.  Cook cous cous according to box directions.  Add salsa/sauce to cous cous and add veggy cheese (this works with regular jack cheese as well). Mix thouroghly until the cheese melts.  Take the sausages out of the toaster and slice then into 1/2 inch coins.  Mix them in with the cous cous, cheese, etc.  Take the peppers out of the oven and scoop in the mixture.  Serve with a nice mixed salad!  Takes about 20 minutes TOPS!!!

I made this today and yummm! I also added soy cheese on top of peppers,and organic mushrooms in with the sauce.

I used danidiva's suggestion for this recipe, it turned out amazing!! I happened to have a box of Mediterranean Curry Couscous on hand, so that was the determining factor. I didn't have any sort of veggie sausage or burger around, but I mixed & topped it with some cheddar soy cheese, very nice presentation. I don't particularly enjoy green peppers that much though, their flavor is so overpowering, but they looked really nice next to the red and yellow ones. Thanks for the stuffed bellpepper idea!

I loved this.  I used green peppers (as we had that on hand), everything on the inside tasted good, the green peppers had a flavour I didn't like so much though.  We came up with some suggestions and will probably try them out later on, use mushrooms and more cheese!  Simple as that  Roll Eyes .  Thanks for sharing!

Great recipe, but I made a couple of changes: First I sliced the bell peppers in half and boiled the halves for 3 minutes, then rinsed with cool water and set aside. For the filling I made a box of "Spanish Rice" that I had sitting around, and while that was cooking sauteed onion, garlic, green bell pepper, and one Tofurky polish sausage, minced to create more of a ground meat-ish situation. Once the rice was done I mixed it all together with about 1/2 cup Trader Joe's tomato basil marinara spaghetti sauce, filled the peppers, and topped with grated Follow Your Heart mozzarella "cheese," then baked them in a pyrex sprayed with nonstick spray at 350 for 15 minutes. The bell peppers themselves came out PERFECTLY (tender, sweet, everything you want out of a pepper), and the filling was nice and spicy, thanks to the Tofurky Polish sausage.

I will definitely be making these again, and plan to fool around with the filling.  Wild rice or couscous cooked in faux chicken broth and mixed with sauteed mushrooms, onions, and diced zucchini is my plan for next time.

I used Ungreen's method of boiling the peppers, I added garlic, onion, garlic salt, the pinto beans and brown rice plus the sauce and some vegan cheese.. it was good, different but not in a bad way. Just as in something I don't usually eat.I shall be making it again. Smiley
