Green Beans with Sun-Dried Tomatoes

Ingredients (use vegan versions):

    1 lb fresh green beans
    1 med onion
    3 oz sun-dried tomatoes chopped
    1 tablespoon roasted chopped garlic
    2 tablespoon olive oil

Directions:

Sauté onions and garlic in olive till onions clear in large skillet, add green beans, sundried tomatoes and salt and pepper. Add enough water to cover bottom of pan. Cook until desired doneness.

Serves: 4

Preparation time: 20 mins


I had these with dinner the other night and they were great. The tomatos gave the beans an extra tang. I added half a squeezed lemon, delicious!

I made this yesterday night and put it on top of couscous made with veg broth... soo good... even better reheated.

I made this today with dinner and everyone thought it was delicious. I used "dried" sun-dried tomatoes, briefly soaking them in hot water, and chopped up raw garlic, instead of roasting the garlic first.
Be sure not to cook the green beans too long. Soggy green beans wouldn't taste good in this recipe.

toasted pine nuts were a nice addition to this.  I kept my green beans whole, but next time I will cut them in halves or thirds so that their size goes better with the tomatoes.  next time I'll probably use frozen cut green beans, in fact.  this was a festive side dish at Christmas with the red and the green... and the omnivores enjoyed it, too.

I made this the other night and was very impressed! The tomatoes added a nice, subtle "tang" to the green beans; fantastic! I sprinkled a little sliced almonds on top as well.

How have I never rated this?  This is probably my #1 most used recipe on vegweb.  This is so yummy and easy to make.  My husband's only complaint is that the sundried tomatoes make it oily (I use the ones packed in olive oil).  But...I love it.  I usually add some soy sauce to the mix after it's almost done cooking to give it an asian flavor, and I eat it over brown rice.  Last time, I added mushrooms when I put in the s.d. tomatoes and that was also tasty.

Fantastic! Just finished cooking this recipe for dinner and I put it over whole wheat pasta.... I am eating it now and enjoying -  yum!
