Kale & Brown Rice with Kick!

Ingredients (use vegan versions):

1 bunch kale, stems removed, chopped
    1 cup brown rice
    2 1/4 cups water
1 tbsp garlic/ginger/chili or 2 crushed garlic cloves, some dried chilies and a tsp crushed ginger
    1 - 2 tbsp soy sauce
1 tsp hot oil or olive oil
    6 cloves garlic, chopped

Directions:

This is a great, easy, lunch or dinner that packs a nutritional whopper - kale and brown rice - and is still really tasty!

First, start the rice.  Combine the brown rice, water, and garlic/ginger/chili (found in the produce section in little jars like the minced garlic.)  If you can't find that, just add a bit of crushed garlic, a few dried chili pepper flakes, and some crushed ginger.  Bring to a boil, then lower heat to a simmer and cook for 35-40 minutes.

Meanwhile, steam the kale first in a tiny bit of water, when the water evaporates, add the oil, soy sauce, and chopped garlic.  Stir fry until the kale and garlic are tender.

Serve either with kale on top of a rice bed, or mix it together!  I made this up today, and it makes an awesome and filling (and nutritional) lunch.

Serves: 2

Preparation time: 45 minutes

I'm going to make this tonight, but I'm going to add some lentils to the rice.  This sounds great.  I love kale!!!!

I didn't have time for brown rice so I made this over millet. YUM, I think this is my new favorite way to eat kale.

Easy and yummy, thanks for this recipe! I added only chili powder to my rice and it turned out great, really added a lot of flavor to the meal.

This kind of thing is fantastic with tofu. I make it every now and then and add some veg soup base powder. Fantastic.

This makes a great lunch to take to work, and it freezes well in single-serve containers.
