Stuffed Peppers

Ingredients (use vegan versions):

    4 large bell peppers (red, yellow, or green)
    1 medium onion
    3 cups cooked brown rice
    1 large can of tomatoes
    1 can of black beans
    1/2 cup of grated vegan cheddar cheese (or Soymage)

Directions:

Preheat oven to 350 F.

In large bowl mix cooked brown rice, diced onion, beans, and tomatoes. Salt and pepper to taste.

Cut off tops of peppers and clean out the insides. Stuff with mixture.  Sprinkle grated cheese on top.

Pour 1/2 cup of water in a shallow casserole dish and place stuffed peppers in this. Cook for 30 minutes or until peppers are tender. This is a great maindish.

Serves: 4

Preparation time: 15-20 mins.


This was a really easy and delicious dinner. Instead of brown rice, I used a mixture of barley and wild rice - it was great! Next time I would use less onion though.

I really enjoyed this recipe. It would probably also be good with corn added to the mixture.

This is a delicious entree. I added a little of each of the following spices: coriander seed, garlic powder, oregano, and cumin. I omitted the pepper. In addition I also included Tofurky Italian Sausage which I chopped into small pieces. The Tofurky can be found at Publix Supermarket.
