Breaded Mushrooms

Ingredients (use vegan versions):

    mushrooms, 1lb (more or less, depending on amount of people)
    olive oil
    2-3 cups Italian breadcrumbs
    cajun seasoning, salt/pepper (or your favorite spice) to taste

Directions:

Separate mushroom caps from stems, and throw everything into a big saute pan with olive oil.  Saute until mushrooms are tender...usually about 7-8 minutes.  Drain off any excess oil, and toss mushroom pieces in the vegan breadcrumbs/spice mixture (tupperware bowl with lid works best--you can shake it pretty hard & coat all the mushrooms quickly).  Remove mushrooms from vegan breadcrumb mixture and serve immediately (while still warm).

This is incredibly easy to prepare, and tastes wonderful!

Serves: 4.

Preparation time: 10 min.

Yuo can buy vegan bread crumbs at the grocerry store or your local health food store, or make bread crumbs by taking a piece of dry (try putting it into the oven until its crispy but not really browned) bread and throwing it into your food processor until its crumbs, or putting it in a plastic baggy and crushing it with a rolling pin.  Then, for this recipes, add Italian spices like Oregano, Thyme, Basil, Marjoram, Rosemary, Black Pepper, etc, to taste, and enjoy!

Hey, I served this with my Easter dinner.  I couldnt get the the vegan bread crumbs to stick, but other than that they were very good!  I ate the mushrooms and scooped the bread crumbs up with a spoon.thanks *ANIMALS ROCK OUT*

i cooked these in a non-stick pan and at the very last second splashe'd some vegetable broth in there so as to make them non-fat (i.e. i didn't use any oil). they also get moist this way so more of the breading sticks on them. quick and healthy snack.

These were amazing! I made them with crushed italian herb croutons instead of breadcrumbs, and whole large white mushrooms. I plan on cooking these often, they were juicy inside and had great texture outside.
