Apple Stuffed Acorn Squash

Ingredients (use vegan versions):

    1 acorn squash
    2-3 apples
    1/4 cup brown sugar
    1 pat of margarine
    dash of nutmeg
    dash of salt, optional

Directions:

Slice the acorn squash in half, and scrape out the seeds and the strings.  Place face down in casserole pan filled with 1/2 inch of water and place in a 350 degree F oven for about 10-15 minutes.  While the squash is steaming there, peal and slice the the apples and mix in the brown vegan sugar.  Take the squash out of the oven, place face up, and fill the cavities with the apple mixture, add a pat of margarine to each and top with a shake or two of nutmeg as taste dictates.  Cover very lightly with foil, and bake until the apples and the squash are soft and cooked, approximately another 1/2 hour.

Serves: 3-4.

Preparation time: 45 min.


I would add some cinnamon as well as nutmeg

This is excellent with raisins mixed in with the apples, nutmeg, cinnamon, and honey. Also add about half a chopped onion for a little contrast. Then the sweetner (ie honey, brown vegan sugar, maple syrup). Mmmm!

This was wonderful with cinnamon, pecans & some chopped dates. I loved it plain too. It is a great addition to a holiday meal and could also be a delicous light supper all by itself.

I have a few suggsetions. First, mix the apples with sugar and cinnamon before putting them in the squash. Also, put crushe'd walnuts in the mixture. Make sure that the squash is soft enough after the first cooking, because the second bake is to cook the apples. Otherwise, very good! Although, I did overdo it on the earth balance and had a puddle of margarine in the squash!

I haven't tasted this but it smells great and the texture seems perfect. I baked the squash alone for 30 minutes and then with the apples for 30 minutes. I also mixed the apples with the spices and sugar (1 tsp nutmeg, 1 tsp cinnamon). It is going to be awesome! Thanks for the idea! Happy Thanksgiving!

This was very nice, especially on a cold Minnesota winter's night.  I modified it slightly by adding not "a dash" of nutmet, but six dashes in with the apples and brown sugar before baking.  Not being a vegan, I also used 2 pats of butter per squash half.

I added an extra 1/2 cup of brown sugar, a teaspoon of vanilla extract and a tablespoon of ground cinnamon. Instead of steaming the acorn  squash, which I find to be an undesirable method of preparing squash, I roasted it.

It came out very well  Smiley

This is very similar to how I make my acorn squash but without apples!
(Nutmeg, cinnamon, salt, black pepper..)
I never thought of adding apples! How yummy!!  Cheesy

Oh, I will also put mine under the broiler for 5-10 minutes just before serving.
Adds a yummy browned top! I assume with the apples and sugar, it will give it a nice caramelized finish.

Thank you for the recipe!!! my boyfriends favorite is squash, and this was my first try, he loved it!!

I, as mentioned in a review, added the sugar (i used organic granulated sugar, 3/4 C.) to the apples along with cinnamon, nutmeg, cloves, and ginger, 2tbsp of veg shortening, 1tsp vanilla, and a drizzle of maple syrup.

the tops of the mix (i piled it up!) got carmelized and crunchy and were sooo good!!

excellent for the upcoming holidays Cheesy

I make a similar stuffed acorn squash but I add raisins and cranberries to the apple and use agave nectar instead of the sugar.  I also think I put in cinnamon.  A very tasty fall treat!

this recipe was delicious. i, too, added dried fruit to the recipe, and some nuts, cinnamon and i didn't use sugar at all.

I never had acorn squash before (just picked it up in the organic section 'cause it looked cool) but this is YUMMY!  What is the texture supposed to be like- soft, sort of stringy, like a sweet potato kinda? 
I'll probably make this for the fam as Thanksgiving lunch.
I also roasted the seeds with some salt- yum.

p.s. I made it just like the recipe only I had it in the oven for like.. 30 mins so it was really carmalized. I used smart balance light margarine.

THis was ok-I don't know, I've never really had a baked squash recipe that I've really loved yet.  Would make again if I had squash I needed to use.

I thought I should review this since I just listed it as one of my most favorite VegWeb recipes on here. I love the ones that give ideas on how to cook foods I otherwise would have no clue about, and winter squash (of all varieties) is definitely at the TOP of that list!

YUM! I want to say that I have in the past baked the squash on its own for awhile rather than in the water, to get that roasted taste. In this case I roast on its own for longer than 20 minutes... maybe closer to 30? My spices were a combination of cinnamon, nutmeg, and cloves with brown sugar. I seem to want to say that I added nuts to the apple filling too (probably walnuts), but maybe not. It sounds good, though!

I made this using brown rice syrup (I didn't have any sugar) and olive oil instead of margarine - like others, I added cinnamon and cloves, and a little salt.  I think I did the steaming wrong, because it took forever to cook, but it turned out pretty great anyway.  Next time I would definitely try adding nuts.  This is a really good idea - the apples go great with the squash.
