Marinated Green Beans

Ingredients (use vegan versions):

    3/4 pound fresh green beans
    1/4 cup red onion, chopped fine
    3 cloves garlic, minced
    ¾ teaspoon salt
    2 tablespoons olive oil
    3 tablespoons lemon juice

Directions:

Snap beans and break into 2 pieces, or leave whole if very small.  Fill a medium sized pot 3/4 full with water and bring to a boil.  Add green beans and cook for 3 minutes, or until tender-crisp.  Drain.  Mix still warm beans with onion, garlic, salt and olive oil.  Leave mixture at room temperature for an hour, in order to let flavors mingle.  Immediately before serving, add lemon juice (otherwise the beans turn yellow).  Best served the same day.

I have never run into someone who didn't love these green beans!  They are packed with the flavors of garlic, onion and lemon juice.  They are really wonderful with tiny new beans, but any fresh will do.  Summer in a bowl!

Preparation time: 1 hour


I made this dish - and added crushed almonds, pan-sauteed tofu (in olive oil and garlic), chopped tomatoes, and  a little hot sauce - it was a full meal for me!  Great recipe, just felt like it needed a little boost!

Nice recipe.  I accidently put the lemon juice in before marinating, decreased the oil, and used yellow onions, but it still tasted very good. I'll definitly make it again.  Thanks!

Claira is right, this dish does need a little boost.  Its good, but its just not great.  It also a misnomer,  there is no sauce for the beans to be marinated in!

I made this for thanksgiving, and three pounds of beans wouldn't have been enough!!  There was enough olive oil and lemon juice in there to make a marinade, and the liquid that was leftover after the beans were gone were GREAT on roasted garlic mashed potatoes!!

Absolutely delightful.  The lemon juice makes it sing!  So much so that I've used the marinade on several other veggies and all met with critical acclaim. 
Thanks a bunch; I'd been wondering what to do with all those green beans...

This is YUMMY!  Thumbs Up Just a really great mix of tastes. The red onion adds something special, as does the lemon juice. Would definitely make this again! Thanks!

These were extra good, I used power onion/garlic salt. Followed everything else to a "T". I will definitely be making again, and soon Cheesy

At first I thought these are missing something and realized I forgot the lemon. After the lemon it was AMAZING! so good.The only thing I didn't do was let it sit because it looked so good I wanted to eat them right away. Next time though I'm going to be sure to cut my onions up smaller, they were pretty big pieces.
