Devine Eggplant

Ingredients (use vegan versions):

    3 tablespoons of dark sesame oil
    1 onion
    1 medium size Eggplant
    3/4 cup of unfiltered apple juice
    1/2 cup of cashew nuts
    1/4 cup of Tamari or Soy Sauce

Directions:

Slice onion anyway you want.
Saute in oil until golden.
Slice eggplant into 2 by 1/2 slices, add to onions.
Saute for about 10 minutes.
Add applejuice and cashews.
Simmer until apple juice is reduced to about half the amount -- about 10 minutes.
Remove from stove and add Tamari to taste.
Serve over rice.

Serves: TWO

Preparation time: 20 minutes


I have never liked eggplant but thought I would try this.  I was amazed!  It was delicious!  And everyone in the house liked it as well.  The only thing I did different was that I sweated the eggplant to remove the bitter juices.  Once sliced, place in colander, sprinkle with salt and let sit about 30-60 minutes.  This dish was SWEET and didn't taste like any eggplant I have ever had!  I also cut the eggplant in cubes instead of slices.

This is excellent!  I used green onion and teriyaki in place of soy sauce; everything else the same.  I loved it.  The flavors complement each other beautifully.  I will definitely make this again.

This sounds really great - what, howe'ver, did everyone use for unfiltered apple juice - I'm not quite sure what the poster means by that.  Does she just mean organic apple juice not from concentrate?

bstutzma: Most filtered apple juice brands are not vegan - they use fish gelatine for their filteration process. The cloudy or unfiltered apple juice (like apple cider) is suitable for use if you are vegan/vegetarian. Hope this helps.

This was not that great- my husband even added hot sauce ( which usually is a good way to stomache most foods) and still threw it out... sorry- I thought it was okay, but nothing I'll make again.

I honestly didn't expect this to turn out this good!  I added basil, garlic, and fresh rosemary like someone suggested and I skipped the oil- just put in the wet ingredients a bit earlier.  Mmm!  Thanks for the recipe!

i didn't rave about this. i suppose it's because the changes i made:
* no cashews (didn't have)
* finely shredded apple and hot water insted of apple juice (can't find natural)
* 1 T sesame seeds and olice oil instead of sesame oil

it was pretty good, next i'm making this with the nuts and juice (if i find).
served over rice coloured with turmeric.

If you're looking for simple, quick and tasty - try this dish! Frankly, that's the highest praise I can give!

I did make two additions that I will recommend - I added about a teaspoon of cornstarch to thicken the apple juice/soy sauce leftovers. It thickened them nicely into more of a sauce. I also added about 1/8 tsp of cayenne. Because, c'mon... when isn't cayenne good?  Grin

So delicious! I never liked eggplant verymuch and I wasn't sure about the sesame oil, but this recipe is just amazing. I used Teriyaki, fresh basil and minced garlic and served it on a bed of couscous and turned out great! My omni husband loved it and said "My compliments to the chef" so, Mona, thanx! Cheesy
