4 tablespoon olive oil
basil, fresh...or dried is fine
salt and freshly ground black pepper
Directions:Peel and slice eggplant into pieces the thickness of sandwich vegan bread. Place olive oil and spices in a shallow, large bowl. Place each piece of eggplant in and turn to coat both sides.
Place slices on a grill, turning only once during grilling. Serve with any sauce you like or just eat plain. They are delicious.

Grilled it, ate it, liked it. A nice way of adding a vegetable to a meal. Howe'ver, I used freshe'd rosemary instead of basil.

I do this without the basil (though now I'll have to try it). Delicious. The inside of the eggplant gets almost creamy. It looks really nice with the grill marks on it too.

I used to eat ALOT of this before my grill blew up...miss it so much!!! its my entire families favorite side FIVE STARS!
