Cauliflower Polonaise

Ingredients (use vegan versions):

    1 head steamed cauliflower
    1/2 cup soft breadcrumbs
    1/4 cup margarine
    juice of 1/2 lemon
    1 tablespoon salt
    1/4 tablespoon freshly ground black pepper

Directions:

Lightly brown crumbs in margarine then add lemon juice and seasonings.  Stir mixture; sprinkle over cooked cauliflower just before serving.  Both the cauliflower and the sauce should be hot when served.

Serves: 4

Preparation time: 20 minutes

"It's cauliflower, of course it's going to be delicious," my partner exclaimed when I handed him the recipe.  And it was... but the breadcrumbs/margarine/lemon/seasonings didn't really produce the sauce results we had expected.  Added more margarine, olive oil, lemon and pepper and still didn't have much of a sauce, but tossed the cauliflower in it anyways.  It was still good!

sauteed my cauliflower on a frying pan with a lid on in a bit of water and used rye crumbs.

a decent way to 'save'  that rotting cauliflower in your fridge. but not i would make for guests or somethig. Smiley
