Braised Collard Greens

Ingredients (use vegan versions):

    1 lb. collard greens, washed, torn, and w/ stems removed
    1 medium yellow onion, diced
    2 large cloves garlic, minced
    1 tablespoon olive oil
    water
    balsamic vinegar
    pepper

Directions:

Saute onion and garlic in oil over med-hi heat.  When tender, add greens.  Stir for 2-3 minutes, then add enough water to almost cover the greens.  Stir occasionally.  When greens are tender and bright green, and some of the water has boiled off, add a spash of balsamic vinegar and pepper to taste.

This is a very low-fat way to enjoy a really cheap food.

Serves: 2-3

Preparation time: 25-30 min


Yummy!  A true southern delight!  But don't forget to was colards (and all greens) very very very well ... garden bugs are known to cling to the undersides of leaves.  And if the dish is a bit strong for your tastes ... try TURNIP greens prepared the same way ... much milder in flavor, but still delicious & nutritious!

This is an excellent dish, rich in vitamins and minerals.  I mixed a combination of collards and mustard greens.  Really delicious.

I found this to be real good, though I thought adding the water in made the onions a bit mushy. Next time I am going to try steaming the collard greens first, then adding them in with the onions and garlic to sautee a bit.

 Shocked This was the first time I have ever made collard greens on my own and they were delicious! I also added some red pepper flakes for spice and then I put the mixxture on a bed of brown rice and soysauce over the top and yum, Plus there was enough for leftovers for lunch the next day.

Pretty good recipe.  I really liked the addition of balsamic vinegar.  I tried the recipe before I added the balsamic and it was kind of blah.  Great way to get a hefty portion of calcium. thanks
