Harvard Beets

Ingredients (use vegan versions):

    16 oz can sliced beets
    2 tablespoon vegan sugar
    2 teaspoon cornstarch
    1/4 teaspoon salt
    1/4 cup vinegar
    2 tablespoon non-hydrogenated vegan margarine

Directions:

Drain beets, reserving 1/2 c liquid.  Combine vegan sugar, cornstarch and salt.  Str in beet liquid, the vinegar and margarine.  Cook, stirring constantly until thickened and bubbly.  Stir in beets.  Cook until heated through.

Serves: 4

Preparation time: 20 minutes

I made this tonight, and it turned out very good...however, my childhood memory of beets is "Ugh"...and I found out that still stands.  I cooked the beets because my husband said this recipe is how he remembered them.  Actually, I made a "Fatigue Buster" juice that required 1/2 a fresh beet, so I cooked the other half (and reduced the ingredients, using a sweetener instead of sugar).  My mom would be glad to know I ate mine all gone...of course, there wasn't much.  Sure is pretty, tho!

Unlike Daisy, I'm a beet-lover from day one, and didn't need much convincing.  What a terrific recipe! 

This is the exact way my mother always fixed them when I was growing up (recipe proportions and everything), and it's THE comfort food from my childhood-- served on top of a scoop of mashed potatoes (which somewhat ruins their gorgeous appearance, but sure tastes good).

Yum.  Thanks for reminding me about this one-- I'll probably make some tonight, since I always have beets in the fridge.
