Simply Fava-los

Ingredients (use vegan versions):

    1 lb. large frozen fava beans
    1/8-1/4 cup olive oil
    6-8 finely diced garlic cloves
    sea salt to taste
    pepper to taste

Directions:

1) Boil/blanch frozen beans (in salt water if desired) for about 5 minutes or until the tough outer skin can be pinched off. Drain and run the beans under cold water so you don't burn yourself... peel the beans. Its a very Zen activity. Smiley

2) While beans are blanching, dice, mince or slice garlic gloves to your preference.

3) Warm the garlic cloves in a skillet on a medium flame with the olive oil and add the fava beans just before they start to brown.

4) Add the fava beans to pan and salt and pepper on top turning until everything is coated nicely. Lower flame, cover and let simmer for 5 minutes.

5) Spoon and serve! Simple.

Shis can also be mashed up and spread on a sandwich like hummus. Fava beans are very meaty and filling. Please note fresh and dried fava beans have a slightly different taste... also make sure you do NOT have any allergies... cooking and prep time vary for fresh and dried beans... this recipe is for frozen ones. Frozen beans retain a lot of their nutritional value. Fava beans are rich in protein, thiamine, and zinc.

Thanks so much for the recipe! I am living in another country without access to tofu, seitan, or other vegan protein options. Fresh faba beans are widely available here and I'm learning to cook with them.
