Peanut-y Marinated Tofu with Sweet Onions and Pineapple

Ingredients (use vegan versions):

    1/4 cup soy sauce
    finely chopped garlic, to taste
    finely grated ginger, to taste
crushed red pepper flakes, to taste
20 oz. can chunk pineapple (save can juices)
    2 tablespoon crunchy peanut butter
1 medium sweet onion, cut into thin rings.
.5 lb. firm or extra firm style tofu
    olive oil

Directions:

Drain tofu thoroughly. Combine soy sauce, garlic, ginger, red pepper flakes, and pineapple juice in a small container. Cut tofu into medium sized chunks and marinate in the prepared dressing for at least an hour in the fridge.

In a large skillet, heat .5 T olive oil until very hot. Let excess marinade drip off tofu prior to adding to the pan.  Set aside half a cup of the left over marinade. Cook tofu, allowing for any liquid in the skillet to cook off. Break tofu up with spatula. Cook until brown.

With the reserved marinade, add peanut butter and heat in microwave until thoroughly combined. Add peanut mixture to the tofu. Continue to cook on high heat until there is no liquid in the pan.

(I like to eat this cold so I transfer the tofu into a storage container and place in the fridge and use the same pan for the onions.)

Heat a tiny amount of olive oil in a skillet. Add onion rings and cook until colored. Add half of the canned pineapple. Cook until pineapple is colored. Serve atop the tofu along with saffron basmati rice.

Serves: 2-4

Preparation time: well worth it

This was pretty good and easy to make. I loved the pineapple taste to it.

When i read the ingredients it sounded a little odd...but its REALLY amazing.

This is an outstanding recipe -- we LOVED it.  YUM!  Be liberal with the garlic, ginger, and red pepper b/c the peanut butter mellows the spice a bit.

Delicious!  I had doubts about this working, but it turned out great and everyone loved it.  I did double the recipe because half a pound of tofu isn't really that much.

This recipe was fantastic!!!  Howe'ver, I tried it without the peanut butter and liked it even better.  So... that's an option for people who aren't huge peanut butter fans.  Taste the sauce before adding the peanut butter and see what you think for yourself.

This was fantastic and easy to make.  I was a little unsure because there aren't alot of measurements (to taste and I didn't really want to keep tasting my marinade...) but I think its impossible to screw this one up.  Delicious!!

This was delicious and easy to make.  Maybe I used a little too much seasoning, but it was very strong flavored and serving it over rice was a great blend.  I will definitly be making this again.

This was YUMMY! This was easy enough for a 14-year-old vegan to make. Put lots of garlic! I love this dish!

like everyone says, so good and easy!  I baked the tofu instead of cooking it in the skillet and I threw in a bag of frozen stir-fry veggies.  next time I will dice the onion instead of leaving it in long strings.  I can tell I'll be making this a lot...

This was delicious! I will certainly make this again. I doubled the recipe using light tofu. Changes I made: I didn't have any onions, so I left them out; at the end, I just added half of the can of pineapple to the tofu/reserved marinade/peanut mixture, mixed and served, instead of browning the pineapple seperately. Thanks so much!

Does any one have any suggestions for a new vegetarian who is nervous about eating/how to prepare tofu correctly. I am extremely picky and not a fan of too many spices but, I do like peanut butter. Thanks!

The marinade was a great idea.  I used soft tofu, so it was more like a scramble, but it still worked.  I bet it would be even better with firm.  I'm going to try marinating tofu more often, thanks to this recipe.

Wow I made this for my parents and they seriously loved it. This recipe is like fast food kind of greasy, but fast food is ... delicious! Oh, I left out the red pepper flakes and pineapple juice and I added about 2 Tbl of maple syrup. Even though I'm a fan of crunchy peanut buter there was only creamy and it amazed

This was an awesome recipe!  I steamed some mixed veggies and added some marinade to them also. Will definitely make this again.
