jkinsell@unm.eduMarinated Tofu with GreensIngredients (use vegan versions): balsamic vinegar
sesame seed oil
olive oil
minced garlic
fresh ginger
pinch of red pepper
tamari sauce
1/2 lb extra firm tofu
large bunch Swiss Chard
medium purple onion
sesame seeds
Directions:Drain tofu and cut up into cubes. Set cubes in marinade and turn occassionally. Marinate for at least 2 hours at room temperature.
Pour off marinade into skillet and heat. Add chopped onion and simmer 1-2 minutes. Add torn pieces of Chard and cover pan. Stir occassionally and continue simmering until the chard wilts. Add the tofu and sesame seeds and heat through. Serve over brown rice.
Serves: 2
Preparation time: 2 hrs. 20 mins.
Great on a bed of brown basmati rice. Yum!!!
