nbacon@gremlan.orgTofu mayoIngredients (use vegan versions): 3/4 lb firm or x-firm tofu
1/4 cup oil
2 tabelspoons lemon juice
3 tablespoons cider vinegar
1 1/2 tablespoons vegan sugar
1/2 teaspoon salt
water as needed for blending
Directions:Put all ingrediants into a blender(liquid first)and blend until smooth. Refridgerate. The lemon juice, vegan sugar and cider vinegar can be adjusted to taste. For a sour cream add more lemon juice and less vinegar.
Preparation time: 5-10 minutes
This is the best mayo recipe I have seen!

I love this mayo! Thank you for sharing your recipe, it is a great substitute for the ol non-veggie kind I used to eat and really miss sometimes on my sandwiches.

I thought his was a great recipe though it does make a lot. I live in Korea where they sell a tofu that's practically liquid which worked well in this recipe. I only used a tablespoon of oil and added some mustard as well.

I just made this mayonaise, and it came out so so so much better than I expected! Thank you so much! I added mustard, and maybe a little less oil (I used 4 tablespoons), and I think I went just a smidgeon heavy on the vinegar, but the result is slightly tangy- just the way I like it! I threw out the other kind I made! THANKS!
