Blueberry and Onion Sweet & Sour Sauce

Ingredients (use vegan versions):

    1 tablespoon reduced fat margarine
    2 small onions, sliced
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1 tablespoon sugar
    1/4 cup grape or apple juice
    2 tablespoon balsamic vinegar
    1 cup unsweetened frozen blueberries
    1 cup cherry tomato(es), chopped

Directions:

Melt vegan margarine in a large skillet over medium-high heat. Add onions, salt and pepper; cook until onions are golden, about 10 minutes.

Add vegan sugar.  Cook until onions are caramelized, about 3 minutes.

Add juice, vinegar, blueberries and tomatoes.  Heat to boil. Remove from heat.

Serve over rice with your choice tofu or meat substitute.

The frozen blueberries paired with balsamic vinegar in this recipe offer a sweet-and-sour flavor that's divine.

This is a really good gourmet stir-fry recipe -- it will look like your eating something in a upscale fancy restaurant. My mom thought blueberries and onions, that doesn't sound very good... but it is oh so gooooooooooood!

Serves: 4

Preparation time: 20 minutes


This was very yummy- I thought it soundsed a little strange but thought that I would give it a go. We fried tofu with the onions and it came out great! Try it- you will like it!

I wanted a quick and light lunch, so I didn't cook any rice or protein and had it as a sort of soup. It was good, but a bit too sweet... I think tofu and rice would soften it down and make it better. If I cook it again I'll do it that way. Nice interesting thing to try though - am glad I did!

This sounds delish but I don't have any juices on hand.  Any ideas what I can use to replace the grape or apple juice?

The only thing I would change is to add some garlic.  Delish!  Definatly make again.
