Dragonfly's Fried Rice

Ingredients (use vegan versions):

    3 cups of brown rice
    1 small head of savoy cabbage (the head of curly mild cabbage), thinly sliced
    2 medium carrots, coarsely grated
    1 medium onion, thinly sliced
    2 Tblsp olive oil
    2 teaspoon toasted sesame oil
    soy sauce, shoyu, or tamari to taste

Directions:

Heat the sesame oil in a skillet and saute the raw rice till it is lightly toasted.  Then, cook in the usual manner you choose.

When the rice is cooked, saute the onion in the olive oil till they begin to get clear.  Add the cabbage and carrots.  Let this just slightly brown in places.  Add the rice and saute till everything is hot, but don't attempt to fry the rice, you have already done that!

Add soy sauce, shoyu or tamari, if you like.

I always toast my brown rice this way, because I like it.  If you do that too, then you can just keep extra cooked rice in the fridge for a fast and easy meal.  You can also use other vegetables, whatever you have around, as long as you always use onions.

Serves: 4-6

Preparation time: 30 mins, plus cooking rice


I made this dish last night and my husband, myself and two of our 5 kids loved it! I cut back to half the amount of rice and still had plenty. It took me less than 30 minutes to prepare- a great quick meal!

what is brown rice where it is available

brown rice is rice that is brown, it is slightly healthier than white rice.  you can find it in most grocery stores with normal rice, or in health food stores. some asian - including south asian - shops carry it as well.

After you toast the brown rice, do you cook it by the usual method? If so, wouldn't that add to the prep time? Brown rice takes 45 minutes to cook.

It says to cook in the usual manner you choose after sauteing.  The prep time says 30 minutes plus the time of cooking the rice.  I think brown rice is more than just slightly healthier than white rice.

This was excellent!  It reminded my family of chinese "chicken" salad.  we might try a few variations in the future but we will always come back to this.  The best part, we had everything in our house and didn't have to make our daily co-op run.  Oh, and it was quick and easy.

A nice, simple recipe to make. I also added some frozen peas near the end.  It would be better if the recipe specified whether the tree cups of rice are supposed to be raw or cooked; I made the mistake of using three cups raw, now I have more brown rice than I know what to do with!ß

I found this to be very bland, despite it being such a pretty dish (I added shredded cabbage (white and purple) to the mix, which added more color).  I will make this again, but I'll need to think up some good seasonings to give it more flavor.
