Stirfry Supreme

Ingredients (use vegan versions):

    sliced vegetable of your choice - e.g bell peppers, spring onions, mushrooms, brocolli
    tofu - cut into cubes
    1 inch root ginger - grated
    1 tablespoon crunchy peanut butter
    1 squirt tomato puree
    1 teaspoon of each : curry paste,
    half block of creamed coconut
    2 cloves garlic and 1 chilli, chopped
    3/4 cup water
    2 tsbp dark soy sauce

Directions:

Stir fry the vegetables in a little oil for a few minutes.  Add the tofu if desired and cook through.  Make sauce by whizzing the remaining ingredients in a blender. Pour over stir-fried veg and cook through.

Serve with rice or vegan pita bread.

Its really easy to make, and tastes great!

Serves: 3 or 4

Preparation time: 20 mins


this sounds great, but I don't understand what half block of creamed coconut is. can someone help?
